Development of gluten-containing and gluten-free crackers based on cereal and legume flours: physicochemical, nutritional, and sensory characteristics
The rising demand for snacks, including gluten-free options, driven by changes in dietary habits, needs a reevaluation of their formulations to create products with enhanced nutritional value. This study focused on developing and characterising, from a nutritional, textural and sensorial perspective, gluten-containing crackers (GCC) and gluten-free crackers (GFC) by incorporating various amounts (0 to 100 %) of a legume blend (LB) made from lentil and pea flours. Results showed that increasing the amount of LB improved the nutritional profile of both GFC and GCC, enhancing protein (up to 19 %), total amino acids (up to 18 g/100 g) and resistant starch content (up to 1.8 %). Additionally, the in vitro starch digestibility (measured using the INFOGEST protocol) decreased by 20 % and 35 % in GCC and GFC, respectively. The incorporation of LB into the formulations did not significantly affect the textural characteristics of either GFC or GCC. From the sensory perspective, positive attributes such as “good, crumbly, pleasant taste, pleasant aftertaste, and pleasant smell” were associated with 25 % and 50 % LB substitution in GCC and GFC, respectively. Overall, adding legume flours has proven to be an effective strategy to improve the nutritional value of cereal-based crackers without compromising consumer acceptability, as long as LB substitution remains at or below 50 %
Circularity as a driver for decarbonization in the manufacturing Industry. Environmentally sustainable digital and technological solutions for energy efficiency and environmental impacts reduction
This doctoral thesis investigates the decarbonization of the industrial sector through the integration
of three strategic transitions identified at the European level: circular, energy, and digital. Within
the framework of the United Nations 2030 Agenda and the European Green Deal, the research
explores the interconnections between the circular economy and the energy transition, placing
particular emphasis on the enabling role of digitalization. The study includes a review of current
technologies, as well as measurement tools and indicators for assessing energy and circularity
performance in industrial organizations.
Developed in collaboration with a Major Agri-food manufacturing Company, the research is
structured along four principal axes: (1) an analysis of the state of the art in policies and regulatory
frameworks for measuring circularity and energy performance; (2) the application of these
frameworks to an industrial case study; (3) an assessment of the potential of digital technologies for
monitoring and managing industrial assets; (4) the simulation of decarbonization scenarios through
a virtual model informed by real monitored data.
The research highlights the critical role of energy efficiency and on-site renewable energy
generation as key strategies with a combined positive impact on circular performance. By
integrating the Energy Audit methodology (as defined by Italian Legislative Decree 102/2014) with
the UNI/TS 11820:2022 technical specification, the research proposes a comprehensive evaluation
framework to support the strategic planning of decarbonization interventions. Improvement
scenarios—focused on ambient cooling systems and photovoltaic installations—were simulated and
demonstrated measurable benefits across all performance dimensions assessed.
The thesis concludes by advocating for the development of real-time, interconnected Digital Twin
platforms as tools for integrated and continuous industrial asset management. Finally, it outlines
future research directions involving the use of artificial intelligence to enhance the optimized
capacity of simulation models in industrial decarbonization pathways
Supersolid phase in two-dimensional soft-core bosons at finite temperature
The supersolid phase of soft-core bosons in two dimensions is investigated using the self-consistent HartreeFock and quantum Monte Carlo methods. An approximate phase diagram at finite temperatures is initially constructed using the mean-field approach, which is subsequently validated through precise path-integral simulations, enabling a microscopic characterization of the various phases. Superfluid and melting/freezing transitions are analyzed through the superfluid density and the long-range behavior of correlation functions associated with positional and orientational order, in accordance with the general picture of Berezinskii-Kosterlitz-Thouless transitions. A broad region at low temperatures is identified where the supersolid phase exists, separating the uniform superfluid phase from the normal quasicrystal phase. Additionally, a potential intermediate hexatic phase with quasi-long-range orientational order is identified in a narrow region between the normal solid and fluid phases. These findings establish self-consistent Hartree-Fock theory beyond the local density approximation as an effective tool, complementary to computationally intensive quantum Monte Carlo simulations, for investigating the melting of the supersolid phase and the possible emergence of the hexatic superfluid phase in bosonic systems with various interaction potentials

Prima la trasformazione dell’economia di produzione in economia di mercato ne ha modificato i connotati insediativi, poi la crisi economica e occupazionale ne ha messo a rischio l’esistenza stessa. Oggi, dopo settanta anni, esaurita la carica attrattiva fondata esclusivamente sulla oramai ridotta lingua sabbiosa costiera, l’industria turistica “moderna” deve saper uscire definitivamente dalla logica della stanzialità e temporalità ed entrare nel vivo di un programma integrato di profonda trasformazione e rigenerazione urbano/territoriale dove anche le tracce dei nuclei storici fondativi, seppur privi di localizzazioni “mozzafiato” o qualità architettoniche straordinarie, possano giocare un ruolo consapevole. Impact of Resveratrol Supplementation on Human Sirt1: A GRADE-Assessed Systematic Review and Dose-Response Meta-Analysis of Randomized Controlled Trials (RCTs).
Background: Resveratrol, a natural polyphenol compound, possesses anti-aging, antitumor, and vascular protective properties. These attributes are believed to stem from its influence on Sirtuin 1 (Sirt1), a member of the human Sirtuin family and a nicotinamide adenine dinucleotide-dependent histone deacetylase.
Objective: The aim of this study was to quantitatively investigate the impact of resveratrol supplementation on Sirt1 levels in adults by conducting a systematic review and meta-analysis of randomized controlled trials (RCTs) involving resveratrol supplementation.
Methods: This Grading of Recommendations Assessment, Development and Evaluation-assessed systematic review involved a comprehensive search of PubMed, Embase, MEDLINE, Scopus, Web of Science, Cochrane Central Register of Controlled Trials, and Google Scholar databases using related keywords and was conducted from March 14, 2024, to April 15, 2024, to identify all RCTs investigating resveratrol's effects on Sirt1. Effect sizes were quantified as mean differences (MDs) or standardized mean differences (SMDs), with standard deviations of outcomes. An overall effect estimate was derived using a random-effects model when 2 or more studies reported similar outcomes. Statistical heterogeneity was assessed through the calculation of I2 statistics. In addition, a dose-response analysis was performed to assess potential dose-response relationships. Risk of bias was assessed using the Cochrane risk-of-bias tool for RCTs (RoB 2). Publication bias was evaluated using Begg's test and a meta-regression using the year of publication as a moderator.
Results: Eleven RCTs examining the effects of resveratrol on Sirt1 gene expression (4 RCTs), protein expression (5 RCTs), and serum levels (3 RCTs) were included in the meta-analysis. The results showed no significant impact of resveratrol on Sirt1 gene expression (SMD = 0.05; 95% CI -0.24 to 0.344; P = .73), protein expression (SMD = 0.3; 95% CI -0.15 to 0.77; P = .18), or serum levels (MD = -0.04; 95% CI -0.235 to 0.16; P = .7). However, subgroup analyses suggested a significant increase in Sirt1 gene expression in studies with an intervention duration of <12 weeks and evaluating blood tissue. Furthermore, the impact of resveratrol on Sirt1 appeared to be influenced by the dosage regimen, with a significant effect for intervention duration.
Conclusions: Study results indicate that resveratrol supplementation does not significantly influence human Sirt1 based on the overall meta-analysis. However, the dose-response analysis suggests that the effect of resveratrol on Sirt1 depends on the dosage regimen
Characterization of the macronuclear and micronuclear pheromone genes of Euplotes raikovi reveals the origin of the mating type genetic diversity
Ciliates produce diffusible, cell-type-specific pheromones to regulate growth and mating. In Euplotes, these signaling molecules belong to species-specific families of disulfide-rich and structurally homologous proteins. Pheromones are co-dominantly expressed by genes in the somatic macronucleus (MAC), whereas their allelic diversity originates from the mating type locus in the germline micronucleus (MIC). During MAC development in sexual process, the MIC-derived diversity of specific alleles is rearranged via macronucleus-destined sequences (MDSs) assembly. While many MAC pheromones are well characterized, their MIC precursors and rearrangement process remain unknown. Here, we identified two MAC pheromone genes (mac-er-13/14) of E. raikovi, and two MIC regions (19 kb in total) containing 10 MDSs that assemble into mac-er-13. These MDSs are separated by internal eliminated sequences (234-3345 bp). The shortest MDSs (9-36 bp) encode the secreted region of pheromone, while longer MDSs (44-419 bp) encode other regions. Considering that the secreted regions show a higher sequence variation and the shorter MDSs have higher probability of alternative processing or imprecise assembly, we hypothesize that the high sequence variability of the macronuclear pheromone genes, which underlies the large number of mating types in E. raikovi, may result from alternative processing or imprecise assembly of these short MDSs

La presente invenzione si riferisce ad un tessuto tridimensionale ottenuto da scarti di lavorazione di
pellame e tessuti, comprendente una pluralità di moduli interconnessi per formare una superficie
continua. Nel settore del tessile e del pellame, la gestione degli scarti di lavorazione rappresenta
una sfida rilevante: tali materiali, irregolari per forma e dimensione, sono difficilmente riutilizzabili
e spesso destinati allo smaltimento, con conseguenti costi e impatti ambientali. I metodi noti non
consentono la creazione di strutture tridimensionali con proprietà strutturali, ergonomiche ed
estetiche integrate e richiedono trattamenti chimici o elementi aggiuntivi, aumentando complessità
e riducendo la sostenibilità. L’intreccio dei moduli proposto consente invece di ottenere un tessuto
tridimensionale dotato di resistenza meccanica, morbidezza e proprietà assimilabili a quelle di
un’imbottitura, senza necessità di cuciture né di stratificazione di materiali differenti, migliorando
così la gestione degli scarti di lavorazione e riducendo l’impatto ambientale
