Prospects and main problems of development of the meat industry
No full textМ’ясна промисловість є однією з найважливіших галузей агропромислового комплексу, яка забезпечує населення України продуктами харчування, збагаченими білками, жирами, вуглеводами, вітамінами.
Значення м'яса у харчуванні людини пояснюється тим, що саме м'ясо є одним з основних джерел повноцінних білків, жирів і великої кількості біологічно активних речовин. У травному тракті м’ясний білок перетворюється на амінокислоти, на основі яких людський організм утворює вже нові, власні білки.
Метою дипломної роботи було дослідження стану виробництва продукції свинарства в країні та перспективи напрямку розвитку м’ясної промисловості.
В роботі розглянуто наступні питання: провести аналіз стану та перспектив розвитку свинарства в Україні; розглянути генофонд свиней України та характеристика порід різного напрямку продуктивності; дати характеристику м'ясо-сальних якостей та фізико-хімічних показників продуктів забою; розглянути причини псування м’яса та м'ясних продуктів; визначити вимоги до якості, умови зберігання, пакування, маркування досліджуваної продукції; визначити розрубування м'яса для роздрібної торгівлі; провести органолептичні дослідження м’яса; розглянути перспективи і основні проблеми розвитку м'ясної промисловості; визначити стан охорони праці та безпеки в надзвичайних ситуаціях.
На основі досліджень зразок м'яса свинини за органолептичними показниками відповідає вимогам ГОСТу 7269-79 і придатне для реалізації в роздрібній торговельній мережі.The meat industry is one of the most important branches of the agroindustrial complex, which provides the population of Ukraine with food products enriched with proteins, fats, carbohydrates, vitamins.
The importance of meat in human nutrition is explained by the fact that meat itself is one of the main sources of high-quality proteins, fats and a large number of biologically active substances. In the digestive tract, meat protein is converted into amino acids, on the basis of which the human body forms new, its own proteins.
The purpose of the thesis was to study the state of pig production in the country and the prospects for the direction of development of the meat industry.
The work considered the following issues: to analyze the state and prospects for the development of pig farming in Ukraine; to consider the gene pool of pigs in Ukraine and the characteristics of breeds of different productivity directions; to characterize the meat and fat qualities and physicochemical indicators of slaughter products; to consider the causes of spoilage of meat and meat products; to determine the requirements for the quality, storage conditions, packaging, labeling of the studied products; to determine the cutting of meat for retail trade; to conduct organoleptic studies of meat; to consider the prospects and main problems of the development of the meat industry; to determine the state of labor protection and safety in emergency situations.
Based on the research, the sample of pork meat meets the requirements of GOST - 7269-79 in terms of organoleptic indicators and is suitable for sale in the retail network

No full textУ тезах доповіді показано, що із можливим скасуванням Господарського кодексу України виникне прогалина у регулюванні відносин із спеціальним режимом господарювання, зокрема тим, що діє на певних територіях та за участі певних суб’єктів, зокрема багатьох суб’єктів із ЗСУ.
Зроблено висновок, що очевидні помилки, допущені раніше під час нормопроєктування, мають своєчасно виправлятися. Запропоновано у статті 17 «Прикінцеві і перехідні положення» Закону України «Про особливості регулювання діяльності юридичних осіб окремих організаційно-правових форм у перехідний період та об’єднань юридичних осіб» від 9 січня 2025 року № 4196-IX видалити частину третю зі змістом: «Визнати Господарський кодекс України (Відомості Верховної Ради України, 2003 р., №№ 18-22, ст. 144) таким, що втратив чинність, з дня введення в дію цього Закону». Також потрібне повернення законів України, які б надали можливість утворення у межах певних географічних територій спеціальних економічних зон та у межах адміністративно-територіальних одиниць територій пріоритетного розвитку.The report's theses show that with the possible abolition of the Economic Code of Ukraine, a gap will arise in the regulation of relations with a special economic regime, in particular, those operating in certain territories and with the participation of certain entities, including many entities from the Armed Forces of Ukraine.
It is concluded that obvious errors made earlier during the legislative drafting should be corrected in a timely manner. It is proposed to delete part three of Article 17 "Final and Transitional Provisions" of the Law of Ukraine "On the Features of Regulation of the Activities of Legal Entities of Certain Organizational and Legal Forms in the Transitional Period and Associations of Legal Entities" dated January 9, 2025 No. 4196-IX with the content: "To recognize the Economic Code of Ukraine (Vidomosti Verkhovnoi Rada of Ukraine, 2003, Nos. 18-22, Art. 144) as having lost force from the date of entry into force of this Law." It is also necessary to return the laws of Ukraine that would allow the creation of special economic zones within certain geographical territories and priority development territories within administrative-territorial units
