Un soffitto al femminile nella Udine del primo Quattrocento: la riscoperta di un ciclo considerato perduto
No full textIl volume raccoglie gli Atti dell’Incontro internazionale di studiosi delle tavolette da soffitto e dei soffitti dipinti medievali svoltosi il 21-22/10/2017 a Viadana (MN), promosso dalla Società Storica Viadanese in collaborazione con il Comune e l’Association Internationale de Recherche sur les Charpentes et Plafond Peints Mèdièvaux di Capestang. Il confronto tra i maggiori specialisti europei ha interessato un ampio ventaglio di casi distribuiti tra Friuli (M. d’Arcano Grattoni e F. Fratta de Tomas), Lombardia (R. Aglio, M. Marubbi, D. Benedetti, P. Venturelli, G. Poldi), Svizzera meridionale (V. Segre), Sicilia (L. Buttà) e Aragona (G. Puchal). P.O. Dittmar ha invece tracciato un quadro generale in riferimento al problema delle Images di soggetto profano che a partire dal tardo medioevo “ritornano” nelle case dopo una collocazione solo pubblica, tanto religiosa quanto laica, durata alcuni secoli. Il testo è arricchito da numerose illustrazioni a colori, relative anche a contesti oggetto in questa occasione di prima pubblicazione. L’ambizioso sforzo dei curatori è stato quello di proporre uno stato dell’arte critico e bibliografico sul fenomeno delle tavolette da soffitto

Identification of lactic acid bacteria isolated from tomas cheese
No full textBu çalışmada Elazığ yöresinde mahalii olarak üretilen ve yöre pazarlarında satışa sunulan bir süt ürünü olan Tomas peynirlerinin bazı fizikokimyasal ve mikrobiyolojik özellikleri belirlenmiştir. Tesadüfi olarak seçilen 16 farklı peynir örneğinde ortalama % kurumadde %42,45 ± 0,08, yağ %18,97 ± 0,23, tuz %4,42 ± 0,10, kül %5,90 ± 0,10, asitlik % 1,34 ± 0,07, protein % 16,34 ± 0,16 ve son olarak pH sonuçları 4,90 ± 0,04 olarak belirlenmiştir. İncelenen Tomas peynir örneklerinde ortalama Toplam Mezofilik Aerobik Bakteri (TMAB) sayısı 7,60 ± 0,68 log kob/g, maya-küf sayısı 7,28 ± 0,87log kob/g, koliform grubu bakteri sayısı < 1 log kob/g, MRS Agarda gelişen laktik asit bakterileri sayısı 7,46 ± 0,75 log kob/g ve M17 Agarda gelişen laktik asit bakterileri sayısı ise 7,74 ± 0,75 log kob/g olarak belirlenmiştir. Tomas peynir örneklerinden 20 adet çubuk ve 25 adet kok şeklinde laktik asit bakterisi izole edilmiştir. Tanımlama sonuçlarına göre toplam 16 izolat Enterococcus faecium olarak, 8 izolat Lactococcus lactis subsp. lactis olarak, 6 izolat Lactobacillus paracasei subsp. paracasei olarak, 5 izolat Lactobacillus plantarum olarak, 5 izolat Lactobacillus brevis olarak, 2 izolat Lactobacillus collioides olarak, 2 izolat Lactobacillus curvatus olarak ve 1 izolat da Lactobacillus salivarius olarak tanımlanmıştır.In this research some physicochemical and microbiolagical properties were determined from Tomas cheese, a dairy product special to Elazığ province and also sold in local markets. Randomly selected from 16 different cheese samples the average values of the ratio of dry matter, fat, NaCl, ash, titratable acidity, total nitrogen and pH value were determined as 42,45 ± 0,08%, 18,97 ± 0,23%, 4,42 ± 0,10%, 5,90 ± 0,10%, 1,34 ± 0,07%, 16,34 ± 0,16% and 4,90 ± 0,04 respectively. The average values of Total Mesophilic Aerobic Bacteria (TMAB), mold &yeast, total coliform, lactic acid bacteria in MRS agar and in M17 agar were as 7,60 ± 0,68 log cfu/g, 7,28 ± 0,87log cfu/g, < 1 log cfu/g, 7,46 ± 0,75 log cfu/g and 7,74 ± 0,75 respectively. 20 different bacilli and 25 different cocci were isolated from Tomas cheese samples. The identification results show that 16 Enterococcus faecium isolates, 8 Lactococcus lactis subsp. Lactis isolates, 6 Lactobacillus paracasei subsp. paracasei isolates, 5 Lactobacillus plantarum isolates, 5 Lactobacillus brevisisolates, 2 Lactobacillus collioides isolates, 2 Lactobacillus curvatus isolates, 1 Lactobacillus salivarius isolates were determinated
