    The research analyzes the development of the craft beer market in Brazil based on the corporatization paths of craft brewers, values and actions which, from a structure of social, symbolic, economic and resource opportunities, enable the transformation of a hobby into a business activity. The methodological strategy inspired by Lahire’s work, exploring the diverse spheres of life of its respondents through in-depth interviews and reconstructing life trajectories, portrays the construction of the craft beer market, emphasizing the similarities, differences, diversities and continuities of a process that is going on globally, but rooted in local processes. The expansion of microbreweries in this decade is due to the entrepreneurial course of artisanal breweries, which transform a hobby of brewing beer at home, in pans, into a new career, by converting professional trajectories into identification as a brewery artisan, responsible for opening new microbreweries, using the knowledge and skills learned and developed in this craft

    Lo studio è volto a comprendere come le pratiche di lavoro e le esperienze di Mastri Birrai, inizialmente realizzate come hobby nel loro tempo libero, hanno permesso lo sviluppo professionale, la costruzione di una nuova professione artigianale e il riconoscimento nel campo di lavoro. Nell’esperienza di fare birra lo sviluppo delle abilità e delle conoscenze è acquisito informalmente, dove l'apprendimento nasce nell'integrazione del lavoro con le routine quotidiane e nella collaborazione tra birrai, nello scambio di conoscenze, nell'indicazione delle attrezzature, nella scelta degli ingredienti, nello scambio di ricette e nell'organizzazione di festival della birra. La nozione di artigianalità è applicata da molti birrai artigianali come mezzo di espressione, di differenziazione e di identità professionale che intreccia racconti di abilità strumentale e passione per il lavoro

    L’artigianato fermentato in bottiglia. Apprendimento, percorsi professionali e imprenditorialità dei birrai artigianali è un’indagine etnografica e interdisciplinare che esplora come la tradizione artigianale possa trasformarsi in conoscenza trasmessa, vocazione professionale e opportunità d’impresa. Attraverso lo studio del settore della birra artigianale, il volume analizza come il “fare” diventi sapere, e come l’apprendimento incorporato nelle pratiche quotidiane dei birrai artigianali dia forma a nuove identità professionali e traiettorie di lavoro significative. Partendo dall’esperienza concreta dei birrai artigianali, il libro affronta i temi della professionalizzazione e dell’imprenditorialità legata al territorio, mettendo in luce il ruolo della passione, dell’autonomia e della qualità come valori fon danti delle nuove generazioni di artigiani. La ricerca approfondisce i processi di acquisizione delle competenze attraverso il lavoro, mostrando come la cultura materiale, il piacere del mestiere e la narrazione del proprio “saper fare” siano oggi elementi centrali nella costruzione di economie locali innovative. Attraverso una lettura critica e situata dell’artigianato contemporaneo, l’autore mostra come il “fare birra” rappresenti un sapere incarnato, composto da abilità pratiche, esperienze condivise e valori legati all’autenticità, alla qualità e al radicamento territoriale. Il libro analizza le motivazioni, le sfide e le strategie dei birrai artigianali, evidenziando il ruolo delle comunità locali, delle reti di supporto e delle narrazioni di mestiere nella costruzione di percorsi imprenditoriali sostenibili. Basato su una solida impostazione teorica e su una ricca base empirica — costruita attraverso osservazioni partecipanti, interviste, analisi documentale e dati etnografici raccolti tra birrifici, festival, reti locali e ambienti produttivi — il volume offre uno sguardo critico e originale sul ruolo dell’artigianato nella società contemporanea. L’opera contribuisce al dibattito sulle economie neo-artigianali, mostrando come le pratiche artigianali possano generare carriere significative, identità professionali radicate e nuovi modi di abitare il lavoro. Metodologia: Attraverso uno studio etnografico, che prevede l'osservazione partecipante, interviste biografiche e l'analisi di dati quantitativi del mercato della birra e sarà condotto in Italia e in Spagna. Risultati: Attraverso il lavoro artigianale come elementi chiave per riflettere sui cambiamenti in atto nell'economia artigianale e sulla creazione di nuove professioni.     The research addresses the construction of new forms of work starting from the experiences of craft brewers, understanding the relationship between learning, career paths and entrepreneurship in the context of the craft economy. The development and growth of microbreweries represents an opportunity for entrepreneurship in the craft sector, offering a growth space for entrepreneurs who wish to create and promote high quality products, while enhancing local resources and contributing to the economic vitality of the territories. Through this dynamic, it is possible to study the process of incorporation of specialized knowledge, skills and competences that occurs through work practices. Furthermore, we explore the paths to become a beer craftsman and analyze the relationship between entrepreneurship in the brewing sector, the local economy and the link with the territory. The experience of craft brewers is part of a global phenomenon of individuals who decide to invest in new craft professions and give new directions to their lives, a choice guided by autonomy, flexibility, passion and the pleasure of work. In parallel, we will explore the re-evaluation of manual work, the authenticity, creativity, innovation and quality of artisan production, the distinction between artisanal and industrial products and recognition through craftsmanship as key elements to reflect on the changes taking place in economy and in the new professions. The research adopts an ethnographic and multidisciplinary approach that encompasses anthropology, sociology, economics, geography, and education.     The research analyses the construction of the craft beer market based on the narratives of professional brewers who have transformed a hobby into a business activity through the characterisation of this craft labour market, the identity and authenticity of craft beers and the role of brewers in the construction of the market narrative. To carry out the research, I mapped breweries, visited, participated in festivals, made netnographic incursions on Facebook, and conducted in-depth interviews with craft brewers. The expansion of microbreweries in this decade results from the entrepreneurialization of craft brewers, who have transformed the hobby of making beer at home, in pots and pans, into a new professional career. The desire to be one's entrepreneur is based on autonomy, initiative and individualisation, in which the formation of the market involves professional and organisational identities, the relationship with consumers, collaboration between breweries, opposition to industrial breweries, and differentiation of authentic beers, because each bottle contains stories that tell the formation of the craft beer market

    In this article, we examine the process of enhancing craft beers through brewers' narratives about quality and authenticity and establishing recognition and reputation through craft beer competitions and festivals. We conducted in-depth interviews with microbrewery owners, conversed with consumers and brewers, observed craft beer festivals, and monitored posts on brewery Facebook pages. We explore narratives about the various processes involved in building authenticity and quality in the craft beer market, highlighting the production of unique and exclusive styles in small batches with carefully selected ingredients and the brewery's origin and local identity. These narrative elements contribute to cultivating a culture centred on experiential consumption and the differentiation of craft production from mass production. Additionally, they lead to recognition through beer competitions and consecration through award certificate ceremonies and bottle labels, which validate the reputation and quality of beers produced by artisanal brewers

Risultati: Il lavoro artigianale si configura come risposta significativa alle dinamiche contemporanee del mercato del lavoro, offrendo alternative preziose per chi cerca una carriera più personale e significativa in un'economia globalizzata. Limiti e implicazioni: Pur promuovendo modelli di consumo sostenibili, la scalabilità e l'integrazione nei mercati globali restano sfide rilevanti, suggerendo la necessità di ulteriori approfondimenti.
