Understanding consumer expectations and reducing asymmetry between consumers and producers: a challenge for food producers in a monopolistic competition market”
ABSTRACT
THE GENERATIONAL TURNOVER IN AGRICULTURE: THEORETICAL PROBLEMS AND EMPIRICAL EVIDENCES
The purpose of this study is to understand the causes determining the exit from the
sector of young adults. Drawing from migration and succession theories, a number of
factors, hypothesised to influence the decision, are tested using a Probit model.
The findings lend support for the selectivity hypothesis: low incomes are negatively
related with the propensity to stay in the sector. The exit of young could be related to
the low earnings and to the preferences of individuals. The intergenerational transfer
seems to be the result of an involvement in the farm activity
The low commercial value fish. How can we increase its consumption?
The primary aim of this research was to understand the target species of interest for a sustainable promotion and development strategy for fish products. We focus on the fish termed “low commercial value fish” (LCVF), which fetch lower prices when compared to well-known fish species. This work was laid out in several different steps: a description of the type of species chosen, an analysis of fish consumer demand and the added value that comes from local identity and from the culture of production and consumption. After a preliminary analysis of Lazio's fish exports the region did not exhibit a competitive advantage in this sector but Lazio shows some productive characteristics that might be extended to several other cases. In particular, it has a productive tradition of fishing. The empirical analysis conducted on local consumers showed a local fish culture in consumption terms that, together with fishing methods, local fish consumption and production characteristics, suggests a promotion and development strategy based on the factors surrounding territorial identity
This work is articulated in several different steps: the description of the type of species chosen, the analysis of fish consumer demand and the added value that comes from local identity and from the culture of production and consumption. The outcome of these results form the base to define the valorization strategies to adopt. This research was conducted in the Lazio region. After a preliminary analysis of Lazio’s fish export towards EU 27, compared to exports of other Italian regions towards the EU 27, the Lazio region did not show a competitive advantage in this sector. The empirical analysis conducted on local consumers showed a local fish culture on a consumption that, together with fishing methods, local fish consumption and production characteristics, suggested a valorization strategy based on the territorial identity factors

The new frontier in consumer science research: a contribute for food products innovation
Towards an integration of sensory research and marketing in new food products development: A theoretical and methodological review
Product innovation can be instrumental for firms that want to be market oriented. There are many
examples in the literature of the importance of sensory analysis in terms of designing, testing,
launching, and rethinking food products. Sensory and product testing researchers have often called on
to participate in the development of new products but they only quantified consumer reactions to
prototypes developed and not in concept development at the early stage development phase. Lately
sensory science seems to move towards market research and the sensory professional is required to
become an expert in concept development at the early stages and not just in the measurement of
sensory responses. Thus, this paper reviewed and categorised the most common methods of consumer
research for sensory professional to participate, with an interdisciplinary approach to the different
stages of New Product Development (NPD) process with the support of background information and the
use of the latest researches in the field of consumer science. This review showed that some of these
techniques may not have attained extensive adoption by product developers, because the conceptual
bases, the theoretical constructs, and descriptive terminology associated with them are distant to
product developers and their qualitative nature place them in conflict more quantitatively
The economic sustainability of bluefin production is strictly correlated to the increasing protection of environmental sustainability of the sector, regulated at international level through the quota instrument. The studies conducted recently, have opened discussions on the division of the total allowable catch (TAC) considering the opportunity of establishing a new allocation of the (TAC) in favour of the other hemisphere, determining the reduction of bluefin production in the Mediterranean sea. This paper begin with a theoretical discussion of the quota as an instrument of the policy maker and then focuses on the microeconomic effects that a possible change in its allocation could have on the profit of bluefin producers.
The theoretical analysis shows that the actual equilibrium between economical and environmental sustainability could be subjected to progressive changes, which, if not corrected with adequate strategies, will always be to the disadvantage of the first. Dealing with this reduction, in order to remain on the market, would be possible only if they are able to maintain the profitability of this production through the use of appropriate strategies aimed to increase the value of the Mediterranean bluefin. These strategies would favour the establishment of a new equilibrium between the economical and the environmental sustainability. In the actual scenario the latter arises strongly and it is important to evaluate the opportunity of finding new tools in order to be competitive on the market. Therefore, in this paper, after showing the peculiarities of the Mediterranean bluefine, we have analysed the more appropriated strategies to increase the added value of this typology of territorial bluefin production in the area where it is concentrated and where, since the ancient time, there is a consolidated tradition in the production and consumption of this product
