Consumer interest in meat labelled attributes : Who cares?
The aim of the study is to better understand consumer attitudes about meat origin, cattle breeding and feeding systems. We analysed the determinants that lead consumers to use labelled information contained on fresh beef and processed beef products. Information was gathered by telephone using a questionnaire survey conducted in the northern Italy. The survey sampled nearly 1000 consumers. Four binary logit models were used to investigate consumers' use of specific labelled information using a set of variables to identify the primary determinants. Results showed that the use of different types of labelled meat-information is affected by the variables related to socio-demographics, product quality, safety perception, and consumer food knowledge
The consequences of voluntary traceability system for supply chain relationships : An application of transaction cost economics
This paper analyses the effects of voluntary traceability on vertical relationships within food supply
chains using a transaction cost perspective. The analysis makes reference to the Italian situation where
the national standard organization has introduced a private standard for traceability that provides a
higher degree of information associated with the individual product than the European mandatory traceability
system. A survey was conducted by questionnaire to assess changes in transaction characteristics,
costs and governance after the introduction of voluntary traceability. The sample represents all Italian
firms applying this standard. Factorial and cluster analyses were applied to find the different reorganizations
of transactions. The results highlight an increase in asset specificity and a decrease in the uncertainty
level throughout the supply chains. The introduction of voluntary traceability shows increased
vertical coordination for firms that previously used oral agreements and variation in transactions conditions
for firms using contracts. Instead vertically integrated firms do not reveal any variation in the governance
of transactions as they are already internally safeguarded
Consumer preferences and labelling : An empirical analysis of the beef sector in Italy
Within the framework of European food safety measures, Reg. 1760/2000 and 1825/2000 have introduced mandatory traceability and relevant labelling into the beef sector. The paper analyses whether information on meat labels can be considered a useful instrument for consumers, facilitating the verification of quality. The purpose of the paper is, first, to evaluate if meat information is used during food purchase. Second, focussing on specific meat information, we assess the interest of consumer for some mandatory and voluntary information cues and identify the determinants affecting the use of them. Data were collected by a survey conducted in the Lombardy, region of northern Italy, and employed a telephone questionnaire. The sample is composed by 1,025 consumers. We estimate 4 models based on the literature and for all the equations we used a binary logit model. The analyses revealed that meat label is widely used by Italian consumers in the formulation of their purchasing preferences. The use of the meat label is also positively connected to consumer attention towards quality signalling such as certification, expiry date and so on. The origin is confirmed to be an important information for a large part of interviewed. Among the voluntary information the system of cattle breeding is related to a consumer who pays particular attention in general to quality indicators whereas the cattle feeding seems to interest young consumers with high level of education
Information, Labelling, and Vertical Coordination : An Analysis of the Italian Meat Supply Networks
After the Bovine Spongiform Encephalopathy (BSE) crisis, the European Union (EU)
introduced mandatory and voluntary labelling for meat products to reduce the food safety
concerns of consumers and to ensure a better distribution of liability among agents of the meat
supply chain. The purpose of this article is to evaluate whether voluntary traceability labelling,
introduced by Regulation 1760/2000, can be considered a useful instrument for both the
producers and consumers of meat products. Attention is focused on the vertical coordination
effects of introducing voluntary labelling along the beef chain and on the interest the Italian
consumer shows in labelled information on meat products. Two surveys were conducted: one
addressing Italian meat organizations that signed voluntary labelling agreements and the other
a sample of 1,025 Italian consumers. With regard to supply, the survey revealed that improved
traceability led to a better redistribution of liability among the agents of the meat supply chain
and to a strengthening of vertical agreements. Regarding the consumers, the results showed a
notable consumer interest in the labelled information such as the meat origin and the
information related to the system of cattle breeding, cattle feeding, and the date of
slaughtering
