From Waste to Resource: Nutritional and Functional Potential of Borlotto Bean Pods (Phaseolus vulgaris L.)
Borlotto bean pods, a by-product of Phaseolus vulgaris processing, represent a promising yet underexplored source of bioactive compounds. This study aimed to characterize the nutritional composition, phytochemical profile, and biological properties of a food-grade extract obtained from borlotto bean pods (BPE). Nutritional parameters were assessed using standard AOAC methods, while primary and secondary metabolites were identified and semi-quantified via 1H-NMR and LC-DAD-ESI-MS/MS. Antioxidant activity was evaluated through six complementary assays: DPPH, TEAC, FRAP, ORAC, ferrous ion-chelating activity, and β-carotene bleaching inhibition. Anti-inflammatory potential was assessed in vitro by evaluating the inhibition of bovine serum albumin (BSA) denaturation and protease activity. BPE showed significant antioxidant capacity across all assays, indicating both hydrogen atom transfer and electron transfer mechanisms, along with metal chelation and lipid peroxidation inhibition. Additionally, BPE inhibited protein denaturation and protease activity in a concentration-dependent manner. These results highlight the potential of borlotto bean pods as a sustainable source of nutritionally and functionally relevant compounds. Future studies should focus on the bioavailability of active constituents, formulation into delivery systems, and in vivo validation to support potential nutraceutical applications

Classification of Marsala wines according to their polyphenol, carbohydrate and heavy metal levels using canonical discriminant analysis
Marsala is a popular Sicilian fortified aged wine with ancient tradition. Nowadays Marsala is exported all over the world and is considered one of the most important dessert wines. The aim of this study was to determine the concentration of carbohydrates, polyphenols and heavy metals in different types of Marsala wines and to achieve statistical classifications by stepwise forward canonical discriminant analysis (CDA). The obtained results provided evidence that different types of Marsala were correctly classified according to their phenolic and carbohydrate compositions. In particular, the residual sugars allowed a good discrimination among Marsalas having similar total sugar contents. CDA, performed using heavy metals as independent variables, showed that Superiore Ambra Secco and Vergine Marsalas were not discriminated, whereas a good separation among Fine Oro Dolce, Superiore Riserva and Fine Ambra Secco wines was obtained. Finally, an overall statistical model showed that the variables with the highest discriminant power were: tyrosol, caffeic acid, procyanidin B1, catechin, quercetin, kaempferol, lactose, rhamnose, zinc, copper and lead

Preceded by some reflections by the author on the circumstances of culture and libraries under at-tack or neglected, in history and nowadays, because of their role as enhancers for freedom, equality and empowerment, the article, then, proposes an interview with the volunteers who run the ECHO Refugee Library in Greece. This is a mobile library that every day brings books, learning opportuni-ties and children’s activities to the thousands of refugees who live in camps in Greece, mainly after getting stuck there in consequence of the EU-Turkey Deal in 2016
