    [P1.010] Foam behaviour in “prosecco” sparkling wines and its evaluation: A statistical modelling approach A. Curioni, S. Vincenzi, G. Lomolino, G. Pasini, S. Bona* University of Padova, Italy The foam behaviour during and after pouring a sparkling wine into the glass has a basic influence on the overall quality perception for the consumer. In this paper a statistical method, which allows to evaluate in numerical terms the behavior of the wine foam in the actual condition of pouring is described. 23 Prosecco sparkling wines of the same typology (Prosecco Extra dry) of different brands were used. Bottles (at 10°C) were opened and wines were poured into flute glasses. A digital video camera recorded the wines into the glass during wine pouring for 40 seconds starting from the beginning of pouring. Once recorded, the video clip was decomposed in frames every 2 seconds and the images were used for measurement of wine and foam heights. Measures were interpolated with a logistic curve. The data were statistically analysed in order to assess the variability among pourings, bottles, glasses and wines. A standard procedure was proposed for pouring, video recording and analysing data. The same video clips used for foam measurements were shown on a screen (more than one time, if necessary) to 2 categories of judges: 11 judges with extensive experience and a group of 106 students. This people was asked to simply assign the Prosecco foams seen in the different videos to three quality classes: poor foam, acceptable foam and good foam. A model based on multiple regression for predicting the score of expert judges was developed. The model was statistically significant with a r2 = 0.84. Furthermore the comparison of expert and non-expert judges scores showed a concordance for the best and worst wines but some differences in the intermediate quality foams. This means that for Prosecco wines with an average foam quality a specific model must be developed as expert judgements cannot be used for forecast those of non-experts.     In this comparative study of the form and theology of Flannery O'Connor and Simone Weil I interrogate how Weil's philosophical writings and her theology illuminate O'Connor's use of both narrative and non-fictional forms, and her Catholicism. The Introduction analyses how Weil's concept of superposed reading provides a new method of approaching both O'Connor, her writings, and O'Connor studies, and focuses on how such apparently different women interconnect. Chapter One explores how both Weil and O'Connor attempt to write their theologies on the souls of their readers yet are each subject to constraints imposed by form. Weil's concept of locating equilibrium between incommensurates is discussed, and her distinctively philosophical approach to fictions and fictionality is used to investigate O'Connor's notion of prophetic fictions and the writer's role. Chapter Two assesses how both writers revivify Christian paradoxes. Weil's monstrous concept of affiiction, and O'Connor's use of the grotesque genre to jolt secular man into an awareness of the sacred are scrutinised. Chapter Three studies how both writers consider an encounter between God and man is possible through the action of grace. My Conclusion interrogates how Weil's work can deepen our understanding of O'Connor's writings, and examines how successful O'Connor is at realising a truly Christian literature. I conclude that despite being a writer of powerful fictions, O'Connor can not be totally successful in her mission as writer-prophet because ultimately fiction escapes orthodoxy

    Polyphenols Profile and Antioxidant Activity Characterization of Commercial North Italian Ciders in Relation to Their Geographical Area of Production and Cidermaking Procedures

    Twenty-four samples of differently produced commercial Italian cider were analyzed for their polyphenols profile and antioxidant activity. A partial least square regression was used to correlate the ciders’ antioxidant activity with their polyphenolic content. Statistical analyses revealed only a clustering pattern in the samples based on their geographical area of production (North-West, NW, vs. North-East, NE). Indeed, NW ciders, compared to NE ones, showed higher antioxidant activity and higher contents of procyanidin B1, catechin, chlorogenic acid, epicatechin, and total polyphenols. On the contrary, no clear-cut clustering pattern determined by cidermaking procedures (i.e., Charmat or Champenoise method) has been observed. These data suggest that the differences observed between NW and NE ciders might be accounted uniquely to the use of different apple varieties and/or the maturation status, as well as the pedoclimatic conditions of their production areas and not for cellar procedures’ specificity

    BACKGROUND: Since the second half of the 20th century, the cultivation of ancient and local apple cultivars has almost disappeared from orchards in Italy. Some of these ancient apple cultivars often possess high nutraceutical values and display lower allergenicity than the modern ones, supporting the so-called ‘green revolution’ theory. RESULTS: In this study, the phenolic composition and the antioxidant activity of five ancient apple cultivars (‘Belfiore’, ‘Pomella Genovese’, ‘Gravenstein’, ‘Bella del Bosco’, and ‘Piatlin’) were compared with a ‘Golden Delicious’ commercial cultivar. Additionally, apples were tested for their potential allergenicity by detecting the presence of Mal d 3, a non-specific lipid transfer protein that represents the main apples' allergen. All apples came from northern Italy (Trentino Region) and were organically produced. Results showed that, for all cultivars, the skins contained more polyphenols than the pulps. ‘Bella del Bosco’ had the highest amount of polyphenols and antioxidant activity, whereas ‘Piatlin’ had the lowest phenolic content. All ancient cultivars presented a higher amount of pulp phenolic compounds than ‘Golden Delicious’. Immunoblotting techniques showed that ‘Bella del Bosco’ and ‘Piatlin’ had very low quantities of Mal d 3 allergen; hence, they can be considered hypoallergenic cultivars. CONCLUSIONS: The preservation of ancient apple cultivars would be of great importance, not only to maintain the biodiversity but also for their nutritional properties. The hypoallergenic activity of some of these cultivars could be of interest also for the preparation of different apple-based products

    The recently enacted reform of German federalism is supposed to make legislation faster, more efficient and better. To what extent are these expectations justified? In order to assess the likely effects of the reform, this study uses a research design that was recently applied by the Research and Reference Services of the German Bundestag (parliament): we estimate the future effects of the reform by analyzing the impact it would have had on the legislation in the 14th and 15th term of the Bundestag if it had already been been in force at that time. In particular we ask: To what extent would the number of laws requiring the consent of the states' chamber, the Bundesrat, have been reduced? Which type of laws would have been affected by this reduction - the more controversial ones, or the less controversial ones? Which policy sectors would have seen the greatest reduction? How much would the reduction have increased the government's capacity to act effectively? Would the legislative process have been accelerated? -- Die verabschiedete Föderalismusreform soll die Gesetzgebung in Deutschland schneller, effizienter und besser machen. Inwiefern sind diese Erwartungen berechtigt? Zur Abschätzung der Reformfolgen auf die Bundesgesetzgebung folgen wir in dem vorliegenden Working Paper einer Vorgehensweise, die der Wissenschaftliche Dienst des Bundestages kürzlich in einer Studie angewandt hat: Die Auswirkungen der Föderalismusreform insbesondere auf die Zustimmungspflicht werden anhand der Gesetzgebung der 14. und 15. Legislaturperiode untersucht. Wir fragen insbesondere: Wie stark hätte sich der Anteil der Zustimmungsgesetze verringert, wenn die neuen Zustimmungsregeln schon in diesen beiden Legislaturperioden gegolten hätten? Wären eher zwischen Regierung strittige oder unstrittige Gesetze von der Zustimmungspflicht befreit worden? Welche Politikbereiche wären betroffen? Wie sehr hätte sich die politische Handlungsfreiheit der Bundesregierung erhöht? Wäre die Gesetzgebung durch die veränderten Zustimmungsregeln beschleunigt worden?

    Caratterizzazione di isoforme di chitinasi da succo d’uva

    Le chitinasi dell’uva sono considerate tra le principali responsabili della instabilità proteica nei vini bianchi. In questo lavoro le proteine del mosto (cv. Manzoni bianco) sono state frazionate utilizzando una cromatografia a scambio anionico seguita da una cromatografia a interazione idrofobica. In base all’analisi elettroforetica (SDS-PAGE) e alla rilevazione dell’attività enzimatica su gel sono state identificate sei diverse bande proteiche con attività chitinolitica. Queste bande sono state sottoposte a spettrometria di massa (MALDI-TOF/TOF MS), che ha identificato tutte le frazioni come Chitinasi di classe IV di Vitis vinifera. Tali isoforme, che mostrano differenti caratteristiche elettroforetiche e cromatografiche, hanno probabilmente un diverso comportamento nel determinare gli intorbidamenti del vino. Quindi il loro studio è importante per meglio capire il coinvolgimento di ogni singola componente nella formazione di torbidità e per sviluppare tecniche enologiche specifiche mirate alla prevenzione della casse proteica dei vini bianchi
