    Ciclo Optativo de Especialización y Profesionalización en Gestión de Calidad y Auditoría AmbientalEl presente trabajo de investigación tuvo como objetivo desarrollar la propuesta de un programa de ecoeficiencia para la reducción de residuos orgánicos y servicios en el comedor universitario de la UNALM. Se buscó ser una alternativa responsable que promueva el uso eficiente de los recursos utilizados en los diferentes procesos y actividades del comedor universitario de la Universidad Nacional Agraria La Molina. El estudio se realizó durante el año 2012 durante los meses de julio a setiembre en la Universidad Nacional Agraria La Molina, siendo desarrollado en el comedor universitario y en el Taller de Conservación de Suelos y Agricultura Sostenible (CONSAS). La propuesta contempló la elaboración de una línea base del consumo eléctrico e hídrico y de la generación de residuos del comedor universitario de la UNALM, lo que sirvió para identificar las medidas ecoeficientes que ayudarán a reducir el consumo de los recursos y a tener un mejor aprovechamiento de los residuos generados a través de la elaboración de compost. Los resultados obtenidos demostraron que para implementar la propuesta planteada se deberían invertir S/. 16,603 soles. La viabilidad económica de la propuesta se comprobó con el Valor Actual Neto (VAN) de S/. 14,031.60 soles y con el Periodo de Recuperación de la Inversión (PRI) de catorce meses y dieciséis díasThe present investigation aims to develop a proposal for a eco-efficiency program to reduce consumable goods and services in the dining hall at National Agrarian University (UNALM). With this proposal, we sought to be a responsible alternative that promotes the efficient use of resources used in the different processes and activities of university dining hall of the National Agrarian University (UNALM).The study was conducted in 2012 during the months of July to September at the National Agrarian University (UNALM), being developed in the dining hall and in the Workshop Soil Conservation and Sustainable Agriculture (CONSAS). The proposal contemplated the development of a baseline of electrical and water consumption and waste generation at the university dining hall of the UNALM, which served to identify eco-efficient measures that will help reduce consumption of resources and a better utilization of waste generated through composting. The results showed that to implement the proposed proposal should invest S /. 16,603 soles. The economic feasibility of the proposal was found with the Net Present Value (NPV) of S/. 14,031.60 soles and the Recovery Period Investment (PRI) fourteen months and sixteen daysTesi
