An Indian restaurant experience in Glasgow: A tale of two curries

    No full text
The development of Indian cuisine both in popularity and style in Britain has been so great that Robin Cook once hailed Chicken Tikka Masala as Britain's national dish. Indeed, the ostensibly Indian dish is widely claimed to have been invented in Glasgow. Scotland's largest city is also the epicentre of a twisted and complicated mixture of debate, conjecture and rumour surrounding the development of Indian cuisine in the UK. This paper explores what authenticity in a restaurant experience really means; finding that authenticity is such a subjective concept that it is often more about appearing authentic than truly being authentic

Thirty samples of Chana Masala and thirty five samples of Meat Masala of various brands were collected from different markets of North India and evaluated for their chemical composition. Chana Masala and Meat Masala varied widely in their chemical composition. Chana Masala had moisture, 4.00-12.00; total ash, 6.88-34.88; acid insoluble ash, 0.97-2.43; common salt, 3.76-27.81; ether extractives, 5.32-16.27; volatiles, 0.06-0.60; alcohol solubles, 14.05-32.26 and water solubles, 24.56-58.98%. Meat Masala had moisture, 5.10-9.20; total ash, 6.27-9.75; acid insoluble ash, 0.26- 1.07; common salt, nil; ether extractives, 5.40-18.79; volatiles, 0.04-1.32; alcohol solubles, 11.69-25.10 and water solubles, 17.46-36.74%. Chana Masala contained higher levels of water solubles and total ash because of the common salt used in its preparation. Frequency distribution histograms have been plotted and quality standards for Chana Masala and Meat Masala have been proposed. The ERH of Chana Masala (initial moisture 8.9%) and Meat Masala (initial moisture 7.8%) were found to be 46.3% and 50.6%, respectively

AbstractObjectiveTo study the potential ameliorating properties of cardamom Elettaria cardamomum (E. cardamomum) L. Maton against pan masala induced damage in lung of male Swiss mice.MethodsThe experimental animals were divided into 3 groups (control, pan masala treated group and pan masala with cardamom treated group) to evaluate pan masala toxicity. The observations were substantiated with profound changes in the lung tissue as revealed in the histologic and transmission electron microscopic examinations.ResultsLung of pan masala treated group showed adenocarcinoma, edema, and inflammation with increased activity of acid phosphatase, alkaline phosphatase, and lactate dehydrogenase. The deleterious effects were seen to be less in cardamom treated group and the enzymatic activity also decreased significantly (P<0.05) in the ameliorating group.ConclusionsThus, the present experiment exciting results are observed when cardamom is supplemented with pan masala, or when given alone

Electricity derivatives: an application to the futures Italian market

Since the liberalization of electricity markets, electricity prices are more volatile and expansion in electricity derivatives trading occurs. Indeed, a well-known feature of electricity prices concerns its high volatility. For this reason, operators use power futures to hedge against unexpected risk deriving from adverse fluctuations of spot prices within the planned delivering period. Indeed, futures contracts permit to fix the price of electricity in advance for the use in the scheduled period. Our paper is devoted specifically to the Italian electricity market. In this respect, we examine empirical data from IDEX, the Energy Derivatives part of the Italian derivatives market IDEM, administered by “Borsa Italiana.” We finally survey the possible connections concerning futures and spot prices and, as a consequence, we deduce information about important indicators whereof the ex-post risk premium and the net convenience yield. For this purpose, we use several regression techniques to determine suitable explanatory variables inherent the Italian market for the ex-post risk premium and the net convenience yield
