    Microbial analysis were performed on ovine carcass surfaces depelt with and without air inflation. The everage microbial load, Enterobacteriaceae and Staphylococcus spp. count detected by swab and excision method on carcass surfaces immidiately after depelting of both inflated and not inflated lambs were similar. The overall hygienic risk related to the air inflating method is very low

    Swab samples were collected form 48 beef carcasses originating from the same abattoir over a period of eight months and were subjected to bacteriological examination prio to chilling. Brisket showed he highest contamination rate. The carcass produced during winter showed a consistently lower contamination than those produced in spring and summer. The majority of all examined carcasses showed an agr plate count lower than Log 3 cfu/cm2 and no one was over Log 4 cfu/cm2
