No full textBu çalışmada, ülkemizde ve dünyada popüler olan nane çayı, iki farklı nane türünden (Mentha spicata L. ve Mentha piperita L.) üretilmiş ve limon tozu eklenerek instant bir çay formu geliştirilmiştir. Bu amaçla nane ve limon ekstraktları, püskürtmeli kurutma yöntemi kullanılarak toz haline getirilmiş, ardından uygun formülasyonlarla karıştırılarak nane-limon çayı üretilmiştir. Çalışma boyunca fiziksel, biyokimyasal, spektrofotometrik, kromatografik ve duyusal analiz yöntemleri kullanılarak ürünlerin özellikleri incelenmiştir. Limonlu instant çaylarda toplam fenolik madde miktarı M. spicata için 41,74 mg GAE/gr, M. piperita için 42,63 mg GAE/gr olarak belirlenmiştir. Limon tozu eklenmesi fenolik madde miktarını bir miktar düşürmüştür. Limonlu instant çayların antioksidan kapasiteleri EC değerleri, M. spicata için 4,16 gr örnek/gr DPPH, M. piperita için 2,96 gr örnek/gr DPPH olarak hesaplanmıştır. TEAC değerleri ise sırasıyla 121,94 ve 155,3 mg TEAC/gr örnek olarak tespit edilmiştir. Limonlu instant çaylarda M. spicata’da rosmarinik asit (11,13 mg/gr) ve M. piperita’da eriositrin (33,54 mg/gr) ana fenolik bileşikler olarak öne çıktığı saptanmıştır. 20°C’de 6 aylık depolama sonunda çayların biyoaktif özelliklerini ve duyusal niteliklerini büyük ölçüde koruduğu, genel beğeni puanlarının 7’nin üzerinde olduğu görülmüştür. Sonuç olarak, püskürtmeli kurutma yöntemi ile üretilen instant nane-limon çayları hem sağlık açısından faydalı bileşenler içermekte hem de tüketicilere pratik bir kullanım sunmaktadır. Bu çaylar, uzun raf ömrü ve duyusal nitelikleri sayesinde yenilikçi bir ürün olarak değerlendirilebilir. </p
The therapeutic effectiveness of some local Nigerian plants used in the treatment of malaria

This thesis describes the investigation of the antiplasmodial properties of seven plants used in the traditional treatment of malaria in Nigeria. The seven plants include Mangifera indica L., Citrus limon L. Burm.f, Musa sapientum L., Psidium guajava L., Carica papaya L., Cymbopogon citratus Staph, and Vernonia amygdalina Delile. These plants are widely distributed in Nigeria and are used in Nigerian folk medicine to treat malaria and febrile illnesses. It is apparent that experimental evaluation of herbal drugs for the treatment of malaria is rather impressive, however, only few are in the market and very few have reached clinical trials. Researchers need to take more active interest in the investigation and standardization of herbal drugs with potent antimalarial activity

Detection of Clostridium botulinum in Some Egyptian Fish Products, Its Control In Vitro Using Citrus Leaves Extracts, and Applicability of Citrus limon Leaf Extract in Tuna
No full textThis study aims to detect Clostridium botulinum and its control using natural leaf extracts of Citrus limon, Citrus sinensis, and Citrus unshiu in Egyptian fish products, e.g., canned tuna, canned sardine, canned mackerel, fesikh, moloha, and renga, as well the application of C. limon in tuna. Moreover, the antibacterial activity of the C. limon leaf extract was also estimated. In the water extract, ascorbic acid, total flavonoid content (TFC), and total phenolic content (TPC) were determined by volumetric, aluminum chloride, and Folin–Ciocalteu approaches, respectively. The antioxidant ability of the extract was analyzed in vitro via free radical scavenging (DPPH) and Ferric reducing assays. The results showed variability in the distribution of the total number of positive C. botulinum in fish samples from three different governorates under study, which were (24) Alexandria, (16) Beheira, and (17) Gharbia, out of the 120 tested samples in each governorate. Additionally, the findings revealed that all three Citrus extracts contain an appropriate number of secondary metabolites, with a sustainable presence of saponin and tannins in the C. limon extract. Furthermore, all Citrus extracts inhibited bacterial growth by increasing the inhibition zone, with C. limon being the best extract (25 mm) compared to C. sinensis and C. unshiu. The overall results showed the high antioxidant and anti-Clostridium powers (p < 0.05) of C. limon leaf extract, indicating its preservative activity in fishery products during storage. Finally, C. limon leaf extract can fight off C. botulinum and is considered a promising natural preservation candidate in ensuring safe and fresh fishery products
