    Analysis of bulk goats' milk and milk-filters from Valtellina and Valchiavenna (Lombardy Prealps) for the presence of Listeria species

    Ninety-six samples of bulk untreated goats' milk and 96 milk-filter samples, obtained monthly from eight farms in Valtellina and Valchiavenna, province of Sondrio, Lombardy Prealps, Italy, from October 2002 to October 2003, were subjected to exhaustive micro-biological analyses for the presence of Listeria spp. Two (2.1%) milk samples and six (6.3%) filter samples were positive for non-pathogenic Listeria species: L innocua or L ivanovii in milk; L innocua, L. ivanovii or L. grayi in milk-filters. No strains pathogenic for humans (in particular L. monocytogenes) were present. This is a reassuring finding particularly as some of the farms are using their untreated milk to produce cheeses on the farm

    The Violin, a typical niche product from Lombardy foot hills of the Alps, has always been produced with goat and sheep meat using old animals of Lamon and Bergamasca breed. 35 samples of fresh, salty, and seasoned sheep meat were assayed, CBT, E. coli, Coliforms, S. aureus, Lactic acid bacteria, Micrococcaceae, Listeria spp., and Salmonella spp. were evaluated, The absence of E. coli, Listeria mon., Salmonella spp. and the presence only in fresh meat of 5. aureus testify the good quality of fresh and seasoned meat

    With this work we wanted to assess the microbial loads in some critical points of manufacture in a pig slaughterhouse. The tests were perlormed on carcasses for determining the Aerobic bacterial count, Enterobacteriacee and Salmonella as indicated in Reg. EC 1441/2007, some work surfaces (table lard and table trimming hams) for the determination of Bacterial aerobic and Knterobacteriacee as indicated in the Decision KC471/2001, on manholes lor the detection of Lideria spp. and I. moneylogenes and finally, the water in the pig scalding tanks for Counting aerobic bacteria and Knterobacteriacee. The results were more than satisfactory, only in three samples taken from the table trimming hams values of Knterobacteriacee were found to exceed the limits, for this reason, the cleaning operations, which are contracted to an outside firm, were immediately improved
