    The CFD analysis of the effects of the size and location of an Air-Inlet in domestic kitchen extraction

    An investigation has been carried out to understand the optimal size and location for air-inlets within confined spaces such as domestic kitchens for improved ventilation processes. This analysis was carried out using Computational Fluid Dynamics (CFD) techniques and Indoor Air Quality (IAQ) factors and comfort levels were used as performance indicators. A model kitchen was constructed including a gas range cooker and an Extraction Hood and the cooking process was simulated. Carbon Dioxide (CO2) concentration was used as the IAQ indicator to establish efficiency of the ventilation process. The effects of the various air-inlet sizes and locations were determined by observing the performance of the kitchen hood in maintaining the recommended level of CO2 within the room

    キッチンは生産の場であり,調理を媒介とした教育とコミュニケーションの場でもある.このため,家庭環境の中でも,実用的なユビキタスコンピュータアプリケーションの可能性が高い場所と考えられる.そこで筆者らは,コンピュータ,ネットワーク,センサを組み込んだ未来のキッチン,Kitchen of the Futureを開発している.このコンピュータ強化されたキッチンにより,単に調理の効率を向上させるだけではなく,キッチンを学びとコミュニケーションの場として復活させることができると考えている.本論文では,Kitchen of the Futureを利用して実装した,調理の記録とネットワークでの公開と共有,調理過程の再生,遠隔地キッチンを接続しての調理支援,調理教材の効果的な提示を実現するアプリケーションについて報告する.\r\n\r\nA kitchen is a place of food production, education, and communication. As it is more active place than other parts of a house, there are lot of potential ubiquitous computing applications in a kitchen. We are developing a computer-augmented kitchen environment: the Kitchen of the Future that embeds various computing elements into a standard kitchen unit. In this paper, we will describe overview of the Kitchen of the Future system and its three applications, i.e, web-ready recipe pages generator, video conference system for cooking instruction, and interactive cooking navigation system

    Do Soup Kitchen Meals Contribute to Suboptimal Nutrient Intake & Obesity in the Homeless Population?

    The double burden of suboptimal nutrient intake and obesity exists when available foods lack essential nutrients to promote health and provide high amounts of energy. This study evaluated the nutrition content of 41 meals served to the homeless at 3 urban soup kitchens. The mean nutrient content of all meals and of meals from each of the kitchens was compared to two-thirds of the estimated average requirement (EAR). The mean nutrient content of the meals did not provide two-thirds of the EAR for energy, vitamin C, magnesium, zinc, dietary fiber, or calcium but provided 11.8% of calories from saturated fat. On average one meal did not meet homeless individuals’ estimated requirements; however, 2 meals did meet estimated requirements but provided inadequate fiber and high amounts of energy, saturated fat, and sodium. Soup kitchen meals may contribute to the high prevalence of obesity and chronic disease reported in the homeless, food insecure population

    Synthesis, crystal structure and EPR spectroscopic analysis of novel copper complexes formed from N-pyridyl-4-nitro-1,8-naphthalimide ligands

    The mono-dentate, pyridyl containing, nitro naphthalimide ligands N-(4-pyridyl)-4-nitro-1,8-naphthalimide (L1) and N-(3-pyridyl)-4-nitro-1,8-naphthalimide (L2) were prepared and complexed with a selection of copper salts [Cu(OAc)2, Cu(CF3SO3)2 and Cu(ClO4)2]. Crystallographic studies were undertaken and revealed that dinuclear acetate bridged complexes resulted from reactions with Cu(OAc)2, while mononuclear systems resulted from reactions with Cu(CF3SO3)2 and Cu(ClO4)2. Despite the differing coordination environments the naphthalimide based ligands provided a range of interesting ?-based interactions in the form of ??, anion?, nitro?, solvent? and C[double bond, length as m-dash]O? associations. Solid state EPR spectra were in agreement with the coordination environments observed from crystallograph
