L’isola da mangiare. L’alterità siciliana vista dai ricettari per stranieri
The work focuses on the relation between typical food and insularity, through a semiotics analysis of Sicilian cookbooks for anglophone readers. Initially, we briefy show examples of how cookbooks have contributed in the past, according to historians and anthropologists, which have shaped territorial identities and promotes regional and local identities. Following this there is a recap on the semiotics approach towards cookbooks and on the several elements involved in this kind of text analysis such as spatial, historical, political and translational factors. Secondly, we analyze a group of Sicilian cookbooks, published for the international market, highlighting their cartographical construction of terroir and history of the Sicilian isle. Through the authors point of view, the publications build a map of internal geographical differences and external past infuences on Sicilian food heritage, constructing the so-called “continental island”. The Sicilian island, as a continent, tends to be shown by foreign cookbooks as an ensemble of well-kept and unchangeable dishes and ingredients, matching western and eastern past civilizations, and paradoxically separate to any current and external influence
La materia nel discorso vinicolo: semiotica del terroir Etna DOC
This work discusses the relationship between wine, matter and terroir. In the first part of the essay, I explore the themes of wine and terroir with the aim of moving beyond a naturalist and exclusively chemical-physical vision of wine. To do so, I propose to approach the wine field through the semiotic definition of “wine discourse”, as a transversal field that brings together, alongside wine, countless different cultural objects such as landscape, packaging, cartography and architecture. The terroir can be seen as an isotopic device that, as a red thread, allows a number of cultural objects to be constructed and experienced within the wine discourse. I will test this hypothesis with the semiotic analysis of a particular case, the Etna production area, and some of its objects such as terroir maps and architectures
New York City, la più grande città del cibo italiano
This work offers an analysis of Italian restaurants in New York City. Historical literature and anthropological has repeatedly highlighted the role that Italian emigration to the east coast plays of the United States and the spread of gastronomic clothes marked as Italian in foreign territory they had in the construction of a tricolor gastronomic effigy (in part. Montanari 2010; Cinotto
2001; Cecla 1998). This interdependence strengthens the relationship from a semiotic perspective with otherness as an indispensable condition for building an indigenous food identity
and food stereotypies recognized as "typical". Tricolor food symbols such as pasta and pizza owe their nationalization, for the most part, to their diffusion and their use as
means of cross-border identity negotiation, of enormous economic and self-descriptive value. To the at the same time, the insistence of a migratory precedent of such dimensions as to represent a real e own diaspora (Gabaccia 2000; Fiore 2017) has led to an attention to the food sector American Italian with a markedly historicist imprint. Less attention was paid, from the academic field, towards those symbolic forms that characterize the culinary presence Italian in the contemporary New York scenario. To this end, our work proposes a comparative semiotic analysis of a group of restaurants in the city which, in different ways, they use food and spaces as forms of expression useful for offering different models of Italian style.
Far from being isolated units, the restaurants return models of typical Italian similar or in controversy between them and yet, in all cases, in strong reciprocity. The analysis and systematization that here we propose aims to highlight how the commercial catering sector can be considered a sector of cultural offer in all respects, capable of inserting itself in its own ways in the debate on the authenticity of food and national customs. Metropolitan space constitutes, precisely in its being a consumer sphere, a territory of cultural exchange and contrast that it favors the clarification of complex Italian food identities and in constant effort of mutual distinction
Storie di mare sulla pelle: dall’old school al contemporaneo
Proponiamo un’analisi dei motivi del tatuaggio marinaresco e delle sue evoluzioni contemporanee mantenenti come tema portante il rapporto tra soggettività e mare. Il corpus sarà composto da illustrazioni e fotografie di provenienza bibliografica e verrà interpretato utilizzando, in particolare, gli strumenti di analisi semiotica del visivo. Il mare ha un ascendente particolare sul tatuaggio occidentale, tanto da poterne essere considerato, per molti versi, l’ambito fondativo. Più fonti, anche primarie , indicano la sottocultura marinaresca come il principale vettore della diffusione moderna dei tatuaggi che avvenne a cavallo
tra il Settecento e l’Ottocento. Ancora nella prima metà Novecento, soprattutto fino alla seconda guerra mondiale e prima che i tatuaggi diventassero mainstream, i maggiori sperimentatori furono marinai e militari.
A fare da spartiacque nella storia dell’arte tatuatoria gettando i prodromi del tatuaggio di massa fu Norman Collins – noto come ‘Sailor Jerry’ e accreditato come il principale tatuatore negli anni ’40. Anello di congiunzione tra la vecchia scuola di inizio secolo e la nuova body art del dopoguerra, Sailor Jerry ha avuto un ruolo decisivo nel codificare e diffondere l’iconografia del tatuaggio di mare che viene oggi marcata come classica e attribuita al genere cosiddetto old school. Dopo qualche decennio discendente, e superato il momento delle controculture, il tatuaggio marinaresco gode di nuova fama anche anche grazie al boom del vintage. Il discorso mediatico sul tatuaggio ha contribuito a cementare il rapporto tra tatuaggio e cultura di mare e a diffonderlo nell’immaginario generalista ben oltre i confini della body art (si pensi a Popeye). Superando la tradizionale contrapposizione tra old school e new school, il rapporto tra tatuaggio e mare è riattualizzato da recenti interpretazioni avanguardiste come quelle dell’artista italiano Pietro Sedda, che mette in contatto il repertorio classico del tatuaggio con le arti colte ricorrendo a stili combinatori e citazionistici tipiche delle arti contemporanee.We propose an analysis of the motifs of the marine tattoo and its contemporary evolutions, keeping the relationship between subjectivity and the sea as the main theme. The corpus will consist of illustrations and photographs of bibliographic origin and will be interpreted using, in particular, the tools of semiotic analysis of the visual. The sea has a particular influence on Western tattoos, so much so that it can be considered, in many ways, its founding environment. Several sources, even primary ones, indicate the seafaring subculture as the main vector of the modern spread of tattoos that occurred on horseback
between the eighteenth and nineteenth centuries. Even in the first half of the twentieth century, especially until the Second World War and before tattoos became mainstream, the greatest experimenters were sailors and military.
Norman Collins - known as 'Sailor Jerry' and credited as the main tattoo artist in the 1940s - was the watershed in the history of tattoo art by throwing the prodromes of mass tattooing. Link between the old school of the turn of the century and the new post-war body art, Sailor Jerry played a decisive role in codifying and disseminating the iconography of the sea tattoo that is now labeled as classic and attributed to the so-called old school genre. After a few decades of descent, and after the time of countercultures, the marine tattoo enjoys a new fame also thanks to the vintage boom. The media discourse on tattooing has helped to cement the relationship between tattoo and sea culture and to spread it in the generalist imagination far beyond the boundaries of body art (e.g. Popeye). Overcoming the traditional contrast between old school and new school, the relationship between tattoo and the sea is updated by recent avant-garde interpretations such as those of the Italian artist Pietro Sedda, who connects the classic tattoo repertoire with the cultured arts using remixes and quotes as commonly occurs in contemporary and 'post-modern' arts
Minestre siciliane e un osservato speciale: la minestra di tenerumi
Questo capitolo prende in esame una famiglia di pietanze che ha ampia diffusione in Italia e in Sicilia, quella delle minestre. Il termine minestra, di difficilissima traduzione, raccoglie piatti talvolta molto diversi tra loro fino ad accomunare, nei ricettari meno recenti, tutti i primi piatti italiani. Nel capitolo sarà approfondito il problema della vaghezza semantica del termine e prenderemo in esame una delle minestre siciliane più note: la "minestra di tenerumi", caratterizzata dalla presenza di un ingrediente autoctona, la cucuzza lunga con le sue foglie. La presenza di quest'ingrediente contribuisce a stabilizzare l'identità del piatto, da un lato, e a sancirne la tipicità e, dunque, la sicilianità, dall'altro.This chapter examines a family of dishes that is widespread in Italy and Sicily, that of soups. The term soup, which is very difficult to translate, collects dishes that are sometimes very different from each other to the point of joining, in the older recipe books, all the Italian first courses. In the chapter the problem of the semantic vagueness of the term will be investigated and we will examine one of the most famous Sicilian soups: the "minestra di tenerumi", characterized by the presence of a native ingredient, the long cucuzza with its leaves. The presence of this ingredient helps to stabilize the identity of the dish, on the one hand, and to sanction its typicality and, therefore, its Sicilian character, on the other
Costruzione della Sicilian Experience. Il caso di Anna Tasca Lanza Cooking School
La Sicilia è storicamente oggetto di narrative di stampo marcatamente edonistico, anche di recente casi rispecchiate e alimentate da casi editoriali di grande successo.
Con l’imporsi di nuovi trend turistici improntati alla scoperta di specialità gastronomiche e vinicole locali, il settore turistico dell'isola gode di un ciclo particolarmente positivo. Le strutture di produzione e distribuzione agroalimentare e le realtà ricettive del territorio si stanno evolvendo per assecondare questo nuovo tipo di domanda, con effetti prevedibili di patrimonializzazione e ricostruzione semiotica della cultura alimentare tipica.
Tra le realtà più in vista, nel settore, c’è la scuola di cucina Anna Tasca Lanza Cooking School, che sta raccogliendo particolare successo da parte di un pubblico anglosassone. Situata nell'ex feudo di Regaleali, in provincia di Palermo, la scuola è posta al centro di un’enorme azienda agricola di proprietà e rappresenta un interessante ibrido tra struttura di ospitalità turistica, luogo di formazione pratica sulla cucina e luogo di degustazione di prodotti agroalimentari a filiera cortissima.
Ci interessa approfondire in che modo la struttura in questione riesca a costruire una 'Sicilian experience' utilizzando come perno la fruizione enogastromica, e facendosi carico di criticità quali l'internazionalità dei partecipanti e il dover dare luogo a un'esperienza contemporaneamente didattica e turistica.Sicily has historically been the subject of markedly hedonistic narratives, even recently cases mirrored and fueled by highly successful editorial cases.
With the establishment of new tourism trends marked by the discovery of local gastronomic and wine specialties, the tourism sector of the island is enjoying a particularly positive cycle. The agri-food production and distribution structures and the accommodation realities of the territory are evolving to accommodate this new type of demand, with predictable effects of capitalization and semiotic reconstruction of the typical food culture.
One of the main actors is Anna Tasca Lanza Cooking School, a well-known Sicilian travel destination targeted at Anglophone audiences. The school is located in the center of a huge farm, Regaleali, and represents an interesting hybrid between a tourist hospitality structure, a place for practical training on cooking and a place where to taste farm to fork and traditional foods.
We are interested in investigating how this destination manages to build a 'Sicilian experience' using food and wine as a pivot, and taking on critical issues such as the internationality of the participants and the need to create an educational and tourist experience at the same time
Pasta alla Norma: il piatto perfetto
Il capitolo ricostruisce la genesi culturale di uno dei piatti più rappresentativi e universalmente apprezzati della cucina siciliana: la pasta alla Norma. Questo piatto si presta come un caso esemplare di studio del "mito delle origini", ossia di mito alimentare che condensa, nelle proprie strutture semantiche, il suo valore sociale stesso. Il capitolo approfondisce l'intertestualità tra pietanza e aneddoto, la particolare composizione figurativa ed estesica del piatto, oltre che le condizioni culturali che ne determinano il valore di "perfezione".The chapter reconstructs the cultural genesis of one of the most representative and universally appreciated dishes of Sicilian cuisine: pasta alla Norma. This dish lends itself as an exemplary case study of the "myth of origins", that is, of food myth that condenses, in its own semantic structures, its very social value. The chapter explores the intertextuality between dish and anecdote, the particular figurative and aesthetic composition of the dish, as well as the cultural conditions that determine its value of "perfection"
Come si fa una cucina regionale. Semiotica del gusto e gastrosfera siciliana
Questo capitolo affronta il tema della cucina regionale in chiave semiotica e introduce un caso di analisi specifico: la gastronomia siciliana. Dopo una breve ricostruzione degli studi storici, antropologici e sociali che si sono occupati dell'argomento, il capitolo procede alla composizione di un corpus di ricettari siciliani che sarà oggetto di analisi nel resto del volume. In chiave semiotica, il genere testuale del ricettario regionale costituisce uno dei principali veicoli di costruzione e circolazione delle cucine regionali e rappresenta, oltre che un oggetto di analisi complesso e sfidante, anche uno strumento di costruzione politica della regionalità: il ricettario seleziona e filtra pertinenze di ordine diverse (attori, tempi, spazi) corrispondenti a punti di vista e valori diversi.This chapter deals with the theme of regional cuisine in a semiotic key and introduces a specific case of analysis: Sicilian gastronomy. After a brief reconstruction of the historical, anthropological and social studies that have dealt with the subject, the chapter proceeds to the composition of a corpus of Sicilian recipe books that will be the subject of analysis in the rest of the volume. From a semiotic point of view, the textual genre of the regional cookbook constitutes one of the main vehicles for the construction and circulation of regional kitchens and represents, in addition to being a complex and challenging object of analysis, also a tool for the political construction of regionality: the cookbook selects and filters pertinences of different order (actors, times, spaces) corresponding to different points of view and values
Forme del fritto: alcune esperienze di consumo
Questo capitolo propone uno studio sul campo di una pratica alimentare che caratterizza la Sicilia e, in particolare, la città di Palermo: lo street food. Lo street food palermitano si caratterizza per essere indissolubilmente legato alla frittura, una modalità di cottura pervasiva tanto nei mercati storici della città, quanto in quei luoghi chiusi che, in forme diverse, tentano di replicarne l'esperienza. Il fritto è, ancor prima che una modalità di cottura dei cibi, un particolare dispositivo ambientale e sensoriale, che pregiudica olfattivamente gli spazi di vendita e consumo e che spinge, alcuni format di distribuzione, a limitarne la pervasività. Vedremo, in questo senso, come la differenza tra una esperienza del fritto e l'altra sia il risultato di strategie di configurazione dello spazio tese a incidere, talvolta in ottica difensiva, sui modi di congiunzione col fritto
Rinaturalizzare la materia. Alcune certificazioni agricole europee
Nel contesto di una perdita di fiducia nelle filiere di produzione e distribuzione alimentare, rese opache dalla crescente complessità del mercato, i consumatori orientano le proprie preferenze verso prodotti la cui "naturalità" è attestata da certificazioni legali. Questo articolo esplora le strategie di rinaturalizzazione alla base della normativa europea sull'agricoltura biologica (CE 834/2007, che aggiorna il testo CEE 2092/91) e del più recente schema di sostenibilità “Biodiversity Friend”, sviluppato da un'ente non governativo italiano. Mostreremo come ogni schema di certificazione organizzi il contributo di attori umani e non umani (oggetti tecnici, materiali, specie animali) in modo diverso. Ciascuna delle certificazioni sposta il confine tra natura e cultura, portando a confermare o mettere in discussione la struttura semantica della cosmologia naturalistica.Dans le cadre d’une perte de confiance dans les filières alimentaires, rendues opaques par la complexification du marché, les consommateurs orientent leurs préférences sur les produits qui attestent leur “naturalité” par des certifications légales. Cet article explore les stratégies de renaturalisation sous-jacentes aux réglementations européennes sur l’agriculture biologique (CE 834/2007, qui met à jour le texte CEE/2092/91) et à la marque déposée “Biodiversity Friend”. Nous montrerons que chaque texte thématise l’apport des acteurs non-humains (objets techniques, matériaux, espèces animales) de manière différente. Chaque thématisation déplace la frontière entre nature et culture, en conduisant à confirmer ou mettre en discussion la structure sémantique de la cosmologie naturaliste
