    Le nanotecnologie nel settore alimentare: uno studio sulla percezione del consumatore nel settore vitivinicolo italiano

    La ricerca sulla percezione dell’impiego delle nanotecnologie nei diversi settori industriali ha importanti riflessi in termini economici e politici; nel settore agroalimentare esistono numerosi dibattiti sull’impiego delle nanotecnologie: la regolamentazione normativa è oggetto di discussione da parte di scienziati e comitati tecnici; anche l’opinione pubblica avrà un ruolo determinante in questo processo. Obiettivo del presente lavoro è di esaminare l’accettazione delle’uso delle nanotecnologie nei consumatori di vino; l’indagine è stata effettuata su un campione di consumatori abruzzesi ed utilizzando come prodotto di riferimento la più importante denominazione di origine a livello regionale, il Montepulciano d’Abruzzo Doc. Il settore vitivinicolo abruzzese è stato preso come interessante modello, perché radicato nella tradizione e costretto a confrontarsi con il dualismo “tradizione - innovazione tecnologica” legato alle possibili applicazioni nano-tecnologiche. Per questo motivo sono stati analizzati attributi legati al metodo di produzione (tradizionale o attraverso l’applicazione delle nanotecnologie) e attributi del prodotto quali il contenuto alcolico, il contenuto calorico e il contenuto di solfiti, che mettono in gioco gli aspetti salutistici del prodotto ma anche quelli edonistici e di “naturalità”. Lo studio ha analizzato le preferenze dei consumatori, applicando la tecnica della conjoint analysis, e tentato di classificare i consumatori di vino in base alle attitudini verso l’uso delle nanotecnologie attraverso una regressione logistica.     Water and Carbon footprint perspective in Italian durum wheat production

    Agriculture has a strong influence on water consumption; the scarcity of water in some areas is a problem, which affects the balance of entire production areas. Global water resources are widely used for food production; some areas of the Mediterranean are scarce in water and the water demand is expected to increase in the future due to population growth. In addition, carbon emissions related to agricultural production represent about 35% of total greenhouse gas emissions. Starting from these considerations, this study investigates water and carbon footprint in italian durum wheat cultivation, taking into account the production from 2011 to 2015. Results showed an extreme variability of these indicators across the country. The regions below 5000 m3 ha−1 of water consumption (dedicated to durum wheat production) are located in the South, whilst the highest values are recorded in the Centre and in the North. With regard to the values of the water surface consumption, the situation is quite the opposite: indeed, these are mainly the Southern and the Adriatic regions that have a high value of the ratio between water footprint (WF) and total agricultural area. carbon footprint (CF) showed a similar trend; its highest value was found in Northern Italy (2462 kg CO2 ha−1), the ratio between the North and the Centre-North is 1.30.     This paper develops a theoretical framework that could facilitate the application of the Autovalutazione, Valutazione periodica, Accreditamento (AVA) method in Italian universities, trying to simplify the use of this approach, and to cover the existing gap between Italy and others European academic institutions. The new competitive environment in the academic system has created a reality where customers compare the ‘knowledge value’ that they are likely to receive in each academic institution. Quality in education is nowadays fundamental and student satisfaction is one of its main dimensions. There is an emphasis on service that meets the students’ needs and expectations, problem-solving processes based on facts, feedback systems and statistical methods and improvement of processes and systems by collaboration and involvement. Starting from 2013, all Italian universities are obliged by law to adopt the AVA method [Self-Evaluation, Periodic Evaluation and Accreditation], a system of activities carried out by the National Agency for the Evaluation of Universities and Research Institutes (ANVUR)

    Regulatory policies and consumers quality perception in the wine sector

    The paper analyses how dierent aspects connected with regulations can in uence consumer quality perception and the value that consumers attribute to wine sector products. In particular, aspects concerning labelling and presentation of designations of origin, which, in turn, mirror dierent regulations of production methods, are considered. Consumer preference can allow enterprises to comply with more restrictive rules and sustain higher costs for dierentiating their products and achieving higher quality. When choosing a product, consumers do not evaluate each single quality factor but the product as a whole, therefore the analysis has to be done with a methodology considering both the combination of all characteristics of the product, and the contribution of every factor to the creation of value for consumers. For this reason the value that consumers attribute to dierent characteristics is evaluated through an experimental economic analysis applying the method of the Conjoint analysis. The experiment was realized evaluating dierent labels of a protected designation of origin "Montepulciano d'Abruzzo DOC" wine, with two dierent groups of consumers: a group of inhabitants of the Abruzzo Region, the region of origin of the wine, and a group of Brazilian people (inhabitants of the Santa Catarina State)
