    La Nutrición es una disciplina científica que comprende el estudio integrado de los nutrientes y sus interacciones con el organismo. Se ocupa de estudiar las funciones, deficiencias y excesos de los nutrientes y su relación con la salud a través del cálculo de las necesidades nutricionales o cantidades adecuadas para lograr un estado óptimo de salud. Los nutrientes son compuesto químicos contenidos en los alimentos que contribuyen a satisfacer las necesidades de materia y energía. Pueden clasificarse según sus características químicas en orgánicos e inorgánicos. Los nutrientes de naturaleza orgánica como los hidratos de carbono, proteínas y lípidos, participan en los procesos de formación de estructuras y en los de transformación de energía. Las vitaminas, que también forman parte de este grupo, son indispensables para ambos procesos y no aportan energía ni son utilizados como unidades estructurales, siendo necesarias en pequeñas cantidades para el normal crecimiento, desarrollo y mantenimiento de la homeostasis, o equilibrio del medio interno del organismo. Los nutrientes de naturaleza inorgánica son el agua y los minerales.     In vitro digestibility and pasting properties of epichlorohydrin modified cassava starch

    The objective of this work was to analyze the influence of epichlorohydrin concentration and reaction time on the food-grade resistant starch production and its pasting properties by using native cassava starch from Misiones-Argentina origin. Cassava starch was modified using epichlorohydrin (0.30% and 0.15%) during 4 or 8 h. Digestibility was evaluated by determining resistant starch as total dietary fiber. Pasting properties and the cross-linking degree were studied using a micro-viscoamylograph Brabender. Resistant starch content was not influenced by epichlorohydrin concentration and reaction time. Cross-linking was detected at higher reaction times (8 h) and epichlorohydrin concentrations (0.30%), where a decrease in viscosity peaks by more than 80% was observed. Both pasting temperature and breakdown were increased, while a decrease in retrogradation was detected. Starches can be suitable for different food applications. This is because of the ability to modify its pasting properties and the invariability of the in vitro digestibility of cassava starch as a result of using epichlorohydrin (at concentrations approved by local and regional legislation) and reaction times of 4 and 8 h.     Mathematical modeling of gluten-free noodles drying, influence of air velocity

    Se modeló matemáticamente la cinética de secado de pastas libres de gluten, y se estudió la influencia de la velocidad del aire sobre datos experimentales. Los fideos espagueti fueron elaborados mezclando fécula de mandioca, harina de maíz, leche en polvo, huevo, margarina y goma xántica, con agregado de agua. Se secaron a 40° C y a tres velocidades de aire: 0,4; 0,8 y 1,5 m/s. Se observó una disminución del tiempo de secado a medida que aumenta la velocidad del aire. Los datos se ajustaron a tres modelos matemáticos semi-empiricos de capa fina, se seleccionó como mejor ajuste la ecuación de Page (R2 = 99%) para las tres velocidades analizadas. El parámetro k de la ecuación de Page presentó dependencia con la velocidad de aire mientras que el parámetro n se consideró constante. Los resultados obtenidos podrían ser utilizados para la predicción del tiempo de secado de las pastas analizadas.The drying kinetics of gluten-free pasta was modeled mathematically, and the influence of air velocity on experimental data was studied. Spaghetti noodles were made by mixing cassava starch, corn flour, milk powder, egg, margarine and xanthan gum, with water added. They were dried at 40° C and three air velocities: 0.4; 0.8 and 1.5 m/s. A decrease in drying times as the air velocity increases was observed. The data were adjusted to three semi-empirical mathematical models of thin layer; for the three velocities analyzed, the Page´s equation was selected as the best fit. The parameter k of Page´s equation presented dependence with the air velocity while the parameter n was considered constant.     Changes in the physical, textural and chemical properties of the enriched pasta elaborated with cassava starch

    Gluten free pasta contain low protein content. The objective was to improve a formulation already optimized of gluten free pasta, through protein fortification to provide a dry pasta with greater industrial use. Egg albumen powder at three levels (1.0, 1.5 and 2.0 g/100 g) was incorporated. Initially, the optimum drying pasta conditions were determined. Then, the cooking quality parameters of pasta and textural quality by instrumental methods and sensory methods were evaluated. Last, chemical composition, in vitro protein digestibility and shelf life (physicochemical and microbiological stored dry pasta studies) the selected formulation was analyzed. The egg albumen fortified pasta (1.5 g/100 g) showed an increase in the cooking quality values and proteins and fibers contents, a desired decrease in the texture parameters (instrumental and sensory), and satisfactory hygienic conditions up to 8th month of storage.     Polycyclic aromatic hydrocarbons (PAHs) in yerba maté (Ilex paraguariensis St. Hil) traditional infusions (mate and tereré)

    Este estudio describe la presencia de hidrocarburos aromáticos policíclicos (HAP) en las infusiones tradicionales frías y calientes de yerba mate ( mate y tereré ), mediante el seguimiento del contenido de benz [a] antraceno, criseno, benzo [b] fluoranteno, benzo [k] fluoranteno , benzo [a] pireno, dibenz [ah] antraceno, benzo [ghi] perileno e indeno [1,2,3-cd] pireno (PAH8), que han sido elegidos como indicadores de la presencia y toxicidad de los HAP en los alimentos por la Agencia Europea de Seguridad Alimentaria. El contenido de PAH8 en mate y tereré se determinó mediante cromatografía líquida de alta resolución utilizando detección de fluorescencia (HPLC-FLD). El contenido de PAH8 en infusiones de yerba mate calientes y frías osciló entre 371,2 y 2438,8 ng / L y entre 19,2 y 937,3 ng / L, respectivamente. El contenido de benzo [a] pireno varió entre 37,0 y 373,9 ng / L en infusiones de yerba mate caliente y entre 7,0 y 92,1 ng / L en infusiones de yerba mate fría. Ninguna de las muestras analizadas excedió los criterios de la Organización Mundial de la Salud para el agua potable, ya que el nivel máximo permitido de benzo [a] pireno es de 700 ng / L.This study describes the occurrence of polycyclic aromatic hydrocarbons (PAHs) in traditional yerba maté hot and cold infusions ( mate and tereré), by monitoring the content of benz[a]anthracene, chrysene, benzo[b]fluoranthene, benzo[k]fluoranthene, benzo[a]pyrene, dibenz[ah]anthracene, benzo[ghi]perylene and indeno[1,2,3-cd]pyrene (PAH8), that have been chosen as indicators for the occurrence and toxicity of PAHs in food by the European Food Safety Agency. PAH8 content in mate and tereré was determined by high performance liquid chromatography using fluorescence detection (HPLC-FLD).PAH8 contents in hot and cold maté infusions ranged from 371.2 to 2438.8 ng/L and from 19.2 to 937.3 ng/L, respectively. Benzo[a]pyrene contents varied between 37.0 and 373.9 ng/L in hot yerba maté infusions and between 7.0 and 92.1 ng/L in cold yerba maté infusions.     Optimization of the extraction of antioxidants and caffeine from maté (Ilex paraguariensis) leaves by response surface methodology

    Optimal conditions for the industrial extraction of total polyphenols from maté (Ilex paraguarien- sis) were determined using response surface methodology, with two independent variables: ethanol percentage of the extraction solution and liquid to solid ratio. Response variables were total polyphe- nol content, antioxidant capacity, concentration of total polyphenols and caffeine content. The optimal conditions found were a liquid to solid ratio from 8 - 9 w w−1 and ethanol percentage of the extraction solution from 30 - 50 % w w−1. Under these conditions the main predicted values corresponding to leaf extracts were 40 μg chlorogenic acid equivalents mL−1 of original extract, 13 g chlorogenic acid equivalents per 100 g dry matter for total polyphenol content, 22 g Trolox equivalents and 15.5 g ascorbic acid equivalents per 100 g dry matter for antioxidant capacity.     Effect of yerba mate (Ilex paraguariensis St. Hil.) extract on the drying behavior of cassava starch films enriched with rebaudioside A

    In this study, the drying behavior of cassava starch-based edible films was investigated. Formulations were elaborated with rebaudioside A, glycerol, and low concentrations (0.5, 2, and 4%, w/w) of yerba mate (Ilex paraguariensis St. Hil.) extract (YM%). Physicochemical properties (pH, apparent viscosity, and density) and film-forming capacity (dip-coating method) were evaluated at 25°C. Films were casted by drying and mathematically described using the Henderson and Pabis thin-layer model. Effective moisture diffusion coefficients (Deff) were determined using theoretical film thicknesses evaluated at the critical moisture content. The Deff dependency on temperature and YM% was analyzed using an Arrhenius-type model. Based on the results, as YM% increased, values of pH, and apparent viscosity decreased. Low YM% increased the drying rates and the values of Deff of cassava starch-based edible films elaborated with rebaudioside A as a sweetener and bioactive compound, obtaining the highest values at 4% (w/w) and 70°C. Novelty impact statement: The optimization and control of the drying process are important to produce coated foods with high-quality and nutritional value in the industry. Yerba mate extract powder added to cassava starch-based formulations at low concentrations (<5%, w/w) is suitable for obtaining edible films and coatings with higher drying rates and effective moisture diffusion coefficients that control film casting due to the better hydrophobicity and plasticizing effect. This information could be useful to manufacture new film-forming fluids with bioactive compounds (e.g., rebaudioside A), such as alternative bio-packages that allow to replace the disposable composite synthetic plastic containers, and products for people with special diet requirements due to its low or sugar-free nature.Fil: Beuter, Daiana Ayelen.     Efecto in vivo del consumo de yerba mate en el plasma humano

Doctorado en Ciencias Aplicadas; Argentina.La yerba mate (Ilex paraguariensis Saint Hil.) es una planta consumida en como infusiones frías y calientes, en la forma tradicional de mate caliente posee gran capacidad antioxidante (CAO) debido a su elevado contenido en polifenoles, así como también minerales como Fe y Mg entre otros. Las deficiencias nutricionales de Fe conducen a la anemia ferropénica, siendo los grupos más vulnerables las mujeres en edad fértil y los niños, debido a las pérdidas menstruales y los grandes requerimientos respectivamente. Los objetivos de la primera etapa de este trabajo fueron, determinar la variación de la CAO plasmática, por los métodos FRAP (poder antioxidante de reducir el férrico) y el método de inhibición del radical catión ABTS, luego del consumo de 300 mL de una infusión de YM, y evaluar la biodisponibilidad de los polifenoles totales. En esta etapa se trabajó con 17 voluntarios, los que ingirieron 300 mL de una infusión de YM y 3 voluntarios 300 mL de agua, se les midió CAO plasmática, polifenoles totales, uricemia y proteinemia a los tiempos 0 (inicial), 20, 40, 60, 80, 100 y 120 minutos posteriores a la ingesta. El objetivo de la segunda etapa fue cuantificar la biodisponibilidad del Mg de las infusiones de YM, en esta etapa se trabajó con 12 voluntarias, las que consumieron 300 mL de una infusión de YM y se les midió magnesemia a los tiempos 0 (inicial), 20, 40, 60, 80, 100 y 120 minutos posteriores a la ingesta. El objetivo de la tercera etapa fue determinar la biodisponibilidad del Fe de las infusiones de YM y el efecto de los polifenoles sobre la biodisponibilidad el hierro no hemínico consumido conjuntamente con las infusiones de YM. En esta etapa se trabajó con 10 voluntarias, las que consumieron primeramente 300 mL de una infusión de YM, en una segunda oportunidad 300 mL de una solución conteniendo 40 mg de Fe como sulfato ferroso y en una tercera oportunidad 40 mg de Fe (como sulfato ferroso) disueltos en 300 mL de una infusión de YM. En todos los casos se realizaron extracciones de sangre al tiempo 0 (inicial) y luego a los 20, 40, 60, 80, 100 y 120 minutos y se midió la CAO plasmática y ferremia en todos los tiempos. En la primera etapa se determinó que la biodisponibilidad de los polifenoles de la YM consumida en su forma tradicional de mate caliente cebado durante los primeros 120 minutos fue de 49,3 ± 11,9 %. La ingesta de 300 mL de una infusión de YM produce un aumento de la CAO en plasma medido por método FRAP de 8,3 ± 3,3 % y por el método ABTS 6,0 ± 2,0 %. La CAO plasmática en promedio comenzó a elevarse a los 20 minutos y se mantuvo elevada hasta los 120 minutos que duró la experiencia. La ingesta de infusiones de yerba mate no produce incremento de la uricemia ni proteinemia plasmática durante las dos horas que duró la prueba. Se determinó que 300 ml de infusiones de YM contienen un promedio de 3,1 ± 1,2 mg de Mg, 376 ± 21 μg de Fe y 1,41 ± 0,16 mg de EAG de polifenoles. Se comprobó que existe una variación en la composición de las infusiones de yerba mate, siendo del 49 % para el Mg y del 23 % para el Fe. Se comprobó que la biodisponibilidad del Mg proveniente de Infusiones de YM preparadas en su forma tradicional de mate caliente, fue en promedio de 3,1 ± 1,2 mg de Mg. Se observa una gran variabilidad interindividual en la dinámica de absorción. Si bien 300 mL de infusiones de YM contienen en promedio el 25 % de la Ingesta Diaria Recomendada (IDR) de Mg, sólo se llega a absorber el 1 % de la IDR. En la tercera etapa se determinó que durante las dos horas que dura la prueba se absorbió en promedio el 44,6 ± 18,4 % del hierro ingerido en los 300 mL de la infusión de yerba mate. Se comprobó que de los 40 mg de hierro ingerido en forma de sulfato ferroso se absorbió en promedio un 8,3 ± 6,1 % de la ingesta total y que cuando se consumió conjuntamente con una infusión de yerba mate su absorción promedio descendió a 2,0 ± 1,3 % de la ingesta inicial. Debido a esto se concluye que las infusiones de yerba mate inhiben la absorción del Fe (como sulfato ferroso) en promedio un 73,2 ± 10 %. Se observa una gran variabilidad interindividual en lo que respecta a la dinámica de absorción de Fe no hemínico. Conociendo la prevalencia de la anemia por deficiencia de hierro en las mujeres en edad fértil y el efecto inhibitorio sobre la absorción del Fe por parte de los polifenoles de las infusiones de yerba mate caliente, es importante aconsejar su consumo alejado de las comidas, como también el de las infusiones de té y café. Se determinó que el consumo de 40 mg de Fe como FeSO4 produce un aumento de la CAO plasmática medida por el FRAP de 2,6 % y por el ABTS de 6,2 %. No se observó diferencia estadísticamente significativa entre la CAO plasmática de las voluntarias que consumieron la infusión de YM y las que consumieron conjuntamente la infusión de YM con los 40 mg de Fe. El aumento de la CAO plasmática debido al consumo de los polifenoles de las infusiones de YM podrían reforzar las defensas antioxidantes previniendo el daño oxidativo causante de muchas enfermedades crónicas. Por otro lado, conociendo la prevalencia de la anemia por deficiencia de hierro en las mujeres en edad fértil y el efecto inhibitorio sobre la absorción del Fe por parte de los polifenoles de las infusiones de yerba mate caliente, es muy importante, en estos casos, aconsejar su consumo alejado de las comidas.Yerba mate (Ilex paraguariensis Saint Hil.) It is a plant consumed in the form of hot and cold infusions, as traditional form hot mate has high antioxidant capacity (AOC) due to its high content in polyphenols, as well as minerals such as Fe and Mg. Nutritional deficiencies of Fe lead to iron deficiency anemia. The most vulnerable groups are women childbearing age and children, due to menstrual losses and large requirements, respectively. The objectives of the first stage of this work were to determine plasma AOC variation by FRAP method (ferric reducing antioxidant power) and ABTS method radical cation inhibition method, after the consumption of 300 mL of YM infusion, and evaluate the total polyphenols bioavailability. At this stage, 17 volunteers were used, 300 mL of an infusion of YM and 3 volunteers 300 mL of water were measured. Plasma AOC, total polyphenols, plasma uric and plasma protein were measured at 0 (initial), 20, 40, 60, 80, 100 and 120 minutes after ingestion. The objective of the second stage was to quantify the Mg bioavailability of YM infusions, in this stage we worked with 12 volunteers, who consumed 300 mL of an YM infusion and was measured plasma magnesium at 0 (initial) times, 20, 40, 60, 80, 100 and 120 minutes after ingestion. The objective of the third stage was determined bioavailability of Fe from YM infusions and the effect of polyphenols on the bioavailability of non-hemiconic iron consumed along with YM infusions. At this stage we worked with 10 volunteers, who first consumed 300 mL of a YM infusion, in a second opportunity 300 mL of a solution containing 40 mg of Fe as ferrous sulfate and in a third opportunity 40 mg of Fe (as sulfate Ferrous) dissolved in 300 mL of a YM infusión. In all cases blood extractions were performed at time 0 (initial) and after 20, 40, 60, 80, 100 and 120 minutes and plasma AOC and plasma iron were measured at all times. In the first stage it was determined polyphenols bioavailability of YM infusions consumed as traditional hot maté primed during the first 120 minutes was of 49.3 ± 11.9 %. Intake of 300 mL of YM infusion leads to an increase in plasma AOC by FRAP method to 8.3 ± 3.3 % and by ABTS method to 6.0 ± 2.0 %. The plasma AOC on average began to rise at 20 minutes and was maintained until the 120 minutes that lasted experience. Intake of YM infusions does not increase plasma uricemia or plasma protein during two hours test. In the second stage, it was determined that, during the two hours test, an average of 6.1 ± 7.1 % (3.9 mg) of the magnesium ingested (77.9 ± 29.1 mg) was absorbed in the 300 mL YM infusion of. It was determined that 300 ml of YM infusions contain an average of 3.1 ± 1.2 mg of Mg, 376 ± 21 μg of Fe and 1.41 ± 0.16 mg of EAG of polyphenols. It was found that there is a variation in the composition of yerba mate infusions, being 49% for Mg and 23% for Fe. It was found that the bioavailability of Mg from YM infusions prepared in its traditional form of mate hot, is on average 3.1 ± 1.2 mg Mg. The Mg bioavailability in YM infusions of is greatly reduced compared to that in solid foods or milk. There is a large interindividual variability in the dynamics absorption. Although 300 mL of YM infusions contain on average 25 % of the Mg Recommended Daily Intake (RDI), only one absorber reaches 1.26 of the RDI. In the third stage, it was determined that during the two hours test lasted, an average of 44.6 ± 18.4 % of the ingested iron in the 300 ml of YM infusion was absorbed, constituting approximately 1 % of RDI For a woman of childbearing age and with a high bioavailability diet of 15%. It was verified that of the 40 mg of iron as ferrous sulfate an average of 8.3 ± 6.1 % of total intake was absorbed and that when it was consumed in conjunction with a YM infusion its average absorption fell to 2,0 ± 1.3 % of the initial intake. Because that, it is concluded YM infusions inhibit the Fe absorption (as ferrous sulphate) by an average of 76 %. There is a large interindividual variability with respect to non-heminic Fe absorption dynamics. Knowing the anemia prevalence due iron deficiency in childbearing age women and the inhibitory effect on the Fe absorption by hot YM infusions polyphenols, it is important to advise their consumption away from meals as well as tea and coffe infusions. It was determined that consumption of 40 mg of Fe as SO4Fe produced an increase in the plasma CAO measured by FRAP of 2.6 % and by the ABTS of 6.2 %. There was no statistically significant difference between plasma AOC of volunteers who consumed YM infusion and those who consumed YM infusion together with the 40 mg of Fe. The increase in plasma AOC due to the consumption of the polyphenols from YM infusions could strengthen the antioxidant defenses preventing the oxidative damage that causes many chronic diseases. On the other hand, knowing the prevalence of iron deficiency anemia in women of childbearing age and the inhibitory effect on Fe absorption by YM infusions containing polyphenols, it is very important in these case, advise your consumption away from meals

Maestría en Tecnología de los Alimentos; Argentina.La producción nacional de té está constituida por alrededor del 3 % de té verde y té semifermentado y el resto por té negro y sus subproductos (denominados industrialmenteBT), teniendo como destino principal la exportación. La región tealera argentina se ubica en la zona noreste del país, en las provincias de Corrientes y Misiones, siendo la más austral del mundo. Muchos factores influyen en la composición química del té, y por lo tanto en su calidad; entre ellos, del área de producción, su clima, variedad implantada, las prácticas culturales y su manufactura. Debido a esto, la caracterización fisicoquímica de los tés de diversos orígenes es muy importante, teniendo en cuenta que estos estudios son muy escasos. Para determinar las diferencias en los parámetros fisicoquímicos de calidad de los distintos tipos de té elaborados en Argentina, se analizaron 51 muestras industriales de tés disponibles en el mercado incluyendo té negro (28), té verde (11), BT (11) y una de té semifermentado. Los ensayos realizados fueron: contenido de humedad, extracto acuoso, cenizas totales, cenizas insolubles en ácido, cafeína, fibra cruda, contenido de polifenoles totales (CPT), capacidad antioxidante (CAO) y los parámetros de color (L, ay b). Las muestras de té negro y té verde fueron las que presentaron mayores contenidos de extracto acuoso (40,3 % bs y 40,7 % bs, respectivamente), mientras que las muestras de BT y el té semifermentado se caracterizaron por presentar un alto contenido de fibra cruda (20,4 % bs y 22,3 % bs, respectivamente). El contenido de cafeína fue superior en el té negro (2,7 % bs) respecto de los otros tipos de té estudiados. El té verde presentó los mayores contenidos de polifenoles totales y capacidad antioxidante (14,9 g equivalentes de ácido gálico/100 g de la materia seca y 30,0 g equivalentes de ácido ascórbico/100 g de la materia seca, respectivamente). Los resultados también pusieron en evidencia diferencias significativas (p < 0,05) en los parámetros de color entre los diferentes tipos de té.Argentinean tea production includes only an average of 3 % of green tea and semifermented tea, and the rest corresponds to black tea and black tea sub-product (BTSP) which is mainly sold to foreign markets. The production area is located in the northeast part of the country, in the provinces of Misiones and Corrientes, the southernmost region in the world. Many factors, such as geographical location, cultivar species, climate and agricultural and manufacture practices may influence the chemical composition of tea leaves, and therefore the tea quality. Because of these factors, the physicochemical characterization of teas from different origins is very important considering that these studies are currently scarce. To determine differences in quality parameters between different types of tea elaborated in Argentina, moisture content, total ash, acid insoluble ash, water extract, crude fibre, caffeine, total polyphenol content, antioxidant activity, and colour parameters (L, a, b) were determined. Fifty-one industrial samples of commercially available teas including black tea (28), green tea (11), BTSP (11) and semifermented tea (1) were used for this study. Water extract contents were significantly higher in black tea and green tea (40.3 % and 40.7 % w/w, respectively), while semifermented tea and BTSP showed higher levels of crude fibre (22.3 % and 20.4 % w/w, respectively). Caffeine contents of black teas (2.7 % w/w) were significantly higher than in the other types of tea. Green teas revealed the highest concentrations of phenolic compounds and the major antioxidant activities (14.9 g gallic acid equivalents/100 g of the dry matter and 30.0 g ascorbic acid equivalents /100 g of the dry matter, respectively). Doctorado en Ciencias Aplicadas; Argentina.El almidón de mandioca nativo (AN) es el derivado más explotado de las raíces de mandioca cultivadas en la provincia de Misiones, principal productora en la Argentina. Éste y otros almidones de distintos orígenes botánicos, se emplean en la elaboración de alimentos y de diversos productos. Los almidones nativos presentan una utilidad restringida en la industria, debido a que ciertas condiciones de los procesos tecnológicos les causan efectos negativos, como por ejemplo: descomposición térmica, retrogradación y sinéresis, entre otros. La adaptación de los almidones a funciones específicas se realiza alterando sus características físicas y químicas, lo cual amplía su rango de aplicación industrial y les aporta mayor valor agregado. La digestibilidad de los almidones también puede ser afectada mediante tratamientos físicos o químicos, obteniendo los llamados almidones resistentes (AR). Los AR resultan de importancia por presentar efectos beneficiosos para la salud por formar parte de la fibra dietaria y por tener buenas propiedades funcionales. El objetivo principal del presente trabajo fue evaluar el efecto del empleo combinado de tratamientos hidrotérmicos: templado “annealing” (ANN), calor y humedad “heat moisture treatment” (HMT) o presión osmótica “osmotic pressure treatment” (OPT) con tratamientos químicos: enlaces cruzados (EC) con epiclorhidrina (EPI) o con trimetafosfato de sodio/tripolifosfato de sodio (TMFS/TPFS o T/T ), en la formación de AR de grado alimenticio, a partir del AN producido en la provincia de Misiones (Argentina). El objetivo secundario fue evaluar las propiedades fisicoquímicas del almidón modificado con mayor contenido de AR con la finalidad de predecir su potencial uso como ingrediente en alimentos. Se modificó almidón comercial de mandioca nativo (Manihot esculenta Crantz) producido en la provincia de Misiones por los tratamientos hidrotérmicos (ANN, HMT y OPT) y químicos (EC EPI y EC T/T) y por sus combinaciones. El ANN se realizó manteniendo una suspensión de almidón (30 %, p/v) a 45 ºC y 50 ºC por 24 h y 48 h. El HMT se efectuó con una humedad de 20 % a 90 ºC y 105 ºC por 60 min, 120 min, 5 h y 10 h. Para la modificación por el OPT se mantuvo, una suspensión de almidón (50 %, p/v en solución saturada de sulfato de sodio), a 90 ºC, 105 ºC, 110 ºC y 115 ºC por 60 min y 120 min. El EC EPI se realizó a pH 11,0 y 30 ºC con concentraciones de EPI de 0,15 % y 0,30 % (p/v) durante 4 h, 8 h, 12 h y 24 h. Para la modificación por EC T/T se trató una suspensión de almidón (33,96-41,04 %, p/p) con una mezcla de TMFS/TPFS (99:1, p/p) en el rango de concentración de 7,17-15 % (p/p) durante 3 h a 45 ºC y pH 11,0. Se cuantificó el contenido de AR por el método de fibra dietaria total (FDT) (Método 985.29 de la Association of Official Analytical Chemists, AOAC) en los almidones modificados por los tratamientos individuales hidrotérmicos y químicos y en los almidones modificados por la combinación de los tratamientos hidrotérmico-químico y viceversa. En los almidones modificados por EC T/T se determinó el contenido de fósforo por el método colorimétrico de la AOAC 995.11. Esto se realizó con el objeto de comprobar que el contenido de fósforo no excediera el límite máximo permitido por el Código Alimentario Argentino de 0,4 % para un almidón modificado de grado alimenticio. Las propiedades fisicoquímicas evaluadas en el almidón modificado con mayor contenido de FDT fueron: pH, acidez titulable, distribución del tamaño de los gránulos utilizando un microscopio óptico equipado con retícula de ocular, poder de hinchamiento, % de solubilidad, índice de absorción de agua, claridad y estabilidad de las pastas, propiedades de las pastas y grado de enlaces cruzados empleando un viscoamilógrafo Brabender, propiedades térmicas por calorimetría diferencial de barrido y comportamiento reológico dinámico mediante un reómetro de tensión controlada con geometría de cono-plato. Se observó que en las condiciones estudiadas, ni los tratamientos hidrotérmicos (ANN, HMT y OPT) ni el tratamiento químico de EC EPI y sus combinaciones condujeron a una reducción importante de la digestibilidad in vitro del almidón de mandioca modificado, mientras que el tratamiento químico de EC T/T permitió la obtención de almidón modificado de grado alimenticio con un elevado contenido de FDT en ciertas combinaciones de concentración de reactivo/almidón. Se detectó un incremento de FDT con el aumento de la concentración de reactivo y de almidón. Las combinaciones de los tratamientos hidrotérmicos ANN u OPT con el tratamiento de EC T/T, independientemente del orden de aplicación, no favorecieron la formación FDT. Los almidones modificados por estas combinaciones presentaron mayor digestibilidad in vitro que el almidón modificado por el tratamiento químico. Se observó que determinadas combinaciones del tratamiento hidrotérmico de HMT con el tratamiento químico de EC T/T (secuencia hidrotérmico-químico) causaron un efecto sinérgico en la formación de FDT produciendo cambios importantes en las propiedades fisicoquímicas. El tratamiento que resultó más efectivo para incrementar el contenido de FDT correspondió a la combinación del tratamiento HMT realizado a 105 °C por 5 h con el tratamiento de EC T/T empleando una concentración de reactivo de 15 % y una concentración de almidón de 41,04 %. Este tratamiento permitió la obtención de un almidón modificado de grado alimenticio con un contenido de FDT de 39,4 %. El almidón modificado por el tratamiento más efectivo para incrementar el contenido de FDT presenta: pH y acidez titulable aceptables, mayor tamaño medio del gránulo a 25 °C en comparación con el AN, elevada estabilidad térmica, bajo poder de hinchamiento, baja solubilidad y bajo índice de absorción de agua. Además, conduce a la obtención de pastas con menor claridad y mayor estabilidad durante el almacenamiento, mayor temperatura de empastamiento y gelatinización, baja viscosidad, ausencia de retrogradación y presenta un comportamiento reológico más similar a un sólido con estructura de gel más débil que el AN. Dicha combinación dual de los tratamientos HMT-EC T/T se presenta como una innovadora alternativa para reducir la digestibilidad in vitro del AN. El almidón modificado por este tratamiento podría ser utilizado con el objeto de incrementar la cantidad de FDT, en alimentos sometidos a tratamientos térmicos en los cuales no se desea un aumento o cambio en la viscosidad por el uso de altas temperaturas. No sería apropiado para el empleo como espesante de un alimento debido a su escaso hinchamiento y viscosidad. La utilización de los almidones obtenidos en alimentos tendería a satisfacer la demanda por los llamados alimentos funcionales. El desarrollo e implementación de esta metodología contribuiría positivamente con el sector industrial dedicado a la producción de almidones de mandioca en la provincia de Misiones, mediante la incorporación de mayor valor agregado y al mejoramiento de la competitividad en el mercado nacional e internacional.Native cassava starch (NS) is the most exploited derivative from cassava roots cultivated in Misiones province, the main producer in Argentina. This and other starches from different botanical origins are used in food processing and various products. Native starches show a limited industry utility due to the negative effects (i. e. thermal decomposition, retrogradation, syneresis, among others) developed under certain process conditions. The adaptation of starches to specific functions is made by modifying their physical and chemical characteristics, expanding their range of industrial application and gives them greater added value. Digestibility of starches can be modified by physical or chemical treatments obtaining the so-called resistant starches (RS). RS are important for presenting beneficial health effects, for being part of the dietary fiber and for having good functional properties. The main objective of this work was to evaluate the effect on the formation of food-grade RS of the convenient combination of hydrothermal treatments such as annealing (ANN), heat moisture treatment (HMT) or osmotic pressure treatment (OPT) with chemicals treatments: cross-linking (CL) with epichlorohydrin (ECH) or sodium trimetaphosphate/sodium tripolyphosphate (STMP/STPP or T/T) by using native cassava starch from Misiones (Argentina). The secondary objective was to evaluate the physicochemical properties of modified starch with higher RS content in order to verify its potential use as an ingredient in food. Commercial native cassava starch (Manihot esculenta Crantz) from Misiones was modified by hydrothermal (ANN, HMT and OPT) and chemical (CL ECH and CL T/T) treatments and its combinations. ANN was carried out maintaining a starch suspension (30 %, w/v) at 45 ºC and 50 ºC for 24 h and 48 h. HMT was carried out with 20 % of humidity at 90 ºC and 105 ºC for 60 min, 120 min, 5 h and 10 h. For the OPT modification, a starch suspension (50 %, w/v in sodium sulfate saturated solution) was maintained at 90 ºC, 105 ºC, 110 ºC and 115 ºC for 60 min and 120 min. CL ECH was carried out at pH 11.0 and 30 ºC with ECH concentrations of 0.15 % and 0.30 % (w/v) for 4 h, 8 h, 12 h and 24 h. For the modification by CL T/T a starch suspension (33.96-41.04 %, w/w) was treated with a mixture of STMP/STPP (99:1 w/w) in the concentration range of 7.17-15 % (w/w) for 3 h at 45 ºC and pH 11.0. The RS content was quantified with the total dietary fiber (TDF) Association of Official Analytical Chemists (AOAC) method 985.29 on the starches modified by hydrothermal, chemical, combination of hydrothermal-chemical and chemical-hydrothermal treatments. The phosphorus content was determined with the colorimetric AOAC method 995.11 on the starches modified by CL T/T in order to verify that the phosphorus content did not exceed the maximum limit allowed by the Código Alimentario Argentino of 0.4 % for a modified food grade starch. The physicochemical properties evaluated in the modified starch with higher content of TDF were: pH, titrable acidity, distribution of the size of the granules using an optical microscope equipped with eyepiece reticle, swelling power, % of solubility, index of water absorption, clarity and stability of pasta, properties of pasta and degree of cross-linking using a Brabender viscoamylograph, thermal properties by differential scanning calorimetry and rheological dynamic behavior by means of a controlled tension rheometer with cone-plate geometry. It was observed that under the conditions studied, neither the hydrothermal treatments (ANN, HMT and OPT) nor the chemical treatment of CL EPI and its combinations led to a significant reduction in the in vitro digestibility of modified cassava starch, whereas the chemical treatment of CL T/T allowed to obtaining food grade modified starch with a high content of TDF in certain concentration combinations of reagent/starch. It was detected an increase in TDF with the concentration increase of reagent and starch. The combinations of the hydrothermal treatments ANN or OPT with the treatment of CL T/T, regardless of the order of application, did not favor TDF formation. The starches modified by these combinations showed greater in vitro digestibility than the starch modified by the chemical treatment. It was observed that certain combinations of hydrothermal treatment of HMT with the chemical treatment of CL T/T (hydrothermal-chemical sequence) caused a synergistic effect in the formation of TDF producing significant changes on the physicochemical properties. The most effective treatment to increase the TDF was the combination of the HMT treatment performed at 105 °C for 5 h with the CL T/T treatment using a reagent concentration of 15 % and a starch concentration of 41.04 %. This treatment allowed to obtaining food grade modified starch with 39.4 % of TFD. The modified starch by the most effective treatment to increase the content of FDT have: acceptable pH and titrable acidity, greater granule size average at 25 °C compared with NS, high thermal stability, low swelling power, low solubility and low water absorption rate. In addition, it leads to obtaining pastes with less clarity and greater stability during storage, higher pasting and gelatinization temperature, low viscosity, absence of retrogradation and it presents a rheological behavior more similar to a solid with weaker gel structure than NS. This dual combination of treatments HMT-CL T/T it exposed as an innovative alternative to reduce the in vitro digestibility of native cassava starch. The starch modified by this treatment could be used in order to increase the amount of FDT in heat-treated foods where no increase or change in viscosity is desired by the use of high temperatures. It would not be appropriate to be used as a thickener of a food because of its low swelling and viscosity. The use of starches obtained in foodstuffs would tend to satisfy the demand for so-called functional foods. The development and implementation of this methodology would positively contribute to the industrial sector dedicated to cassava starches production from Misiones by means of the incorporation of greater added value and to the improvement of the competitiveness in the national and international markets
