    The actual purpose of ostrich breeding in Italy is the purchase of the parents only, but not the commercial utilization of the meat and other products (leather and feathers). The absence of specific slaughtering lines, because they are too expensive, had led to make a trial to verify the adaptation of some mammals slaughtering lines (sheep, goats and cattle) of varying mechanization level and to estimate the microbiological findings. Our study put in evidence the likeness among the ostrich slaughtering phases and those of the other avian species and, because of the massive dimension, those of mammals and particularly the cattle. Then, a specific flow diagram and designing criteria for ostrich slaughtering, adapted or specific, structures are proposed. Moreover, it is defined a standard cell that seems to be the best solution to the actual problems observed, with the addition of some pre-fabricated elements

    The purpose of ostrich slaughtering in Italy is the adaptation of mammals lines (pigs and cattle); actually, we find eight CEE factories waiting for definitive authorization to ostrich slaughtering. This study underlines the safety engineering aspects, to preserve employed manpower from injuries; it were defined safety engineering aspects common to the slaughter processes, but in the ostrich case higher probability of doing someone by workers inability and technical likeness too is caused. Moreover, typical ostrich slaughtering risks are defined; the most significative of them are referred to slaughetering phases when ostrich are almost alive. Some machines and plant solutions to reduce typical risks are proposed

    Power consumption and quality features in the hammer crushing olive oil production (ISI)

    In a previous research, a preliminary analysis on the thermal balance in different crushing systems for olive oil production was carried out. According to the previous results, in this paper the study has been extended to power consumption aspects related to the main quality features of the extracted olive oil, restricting the analysis only to the hammer crushing (Coratina cultivar), which represents the worst case. In particular, the effect of the olives delivery on the power consumption and quality of the extracted oil has been studied. The experimental trials, carried out on a laboratory plant during the 1993-94 and 1994-95 olive-oil seasons, show that, even though the diagram of power consumption has a parabolic increasing trend, the specific power decreases with the olives delivery. Anyway, studying the olives hammer crushing process also from the qualitative point of view (polyphenols number, acidity, peroxide number and induction time), it is possible to define an optimal range of olives delivery values. This optimal range (140 kg/h-240 kg/h for the studied hammer crusher) represents the better working solution from both the point of view of the power consumption and the quality of the extracted oil. In particular, at the beginning of the olive oil season it is necessary to work near the greatest lower bound of the optimal range just defined. With the passing of the harvesting time, the olives delivery has to be increased, reaching values near the greatest higher bound at the end of the olive oil season

    This study is part of a wider investigation whose aim is to define the designing criteria to be used when planning the construction of abattoirs compliant with EC Directives and capable of producing competitive products both in Italy and abroad. In particular, this paper concerns the correlations between the design variables and the needs in terms of modulation, likely to occur in this kind of structure to give it flexibility and functional characters. These are the main factors that contribute to obtain good results by the building, from the technical and economical point of view. For this purpose, the elements taken into consideration have been the various processing times and methods, the number of workers employed in each plant, and the sizes of the machines and equipments. This study has been carried out by processing the experimental data collected in five Apulian abattoirs taking into account all the static and the dynamic phases of slaughtering both in terms of plants and of operation. In addition, also the possibility of building flexible structures to be added to the external structure has been analyzed. The results have led to definition of a standard cell that seems to be the best solution to the problems observed with the addition of some pre-fabricated elements

    Experimental trials of ratites skinning in order to fix plant and mechanical solutions

    Theoretical analysis of skinning process has been carried out, and an automatic measurement system in order to record the drawing-force on the animal’s body during skinning tests, has been designed. Moreover, some mechanical criteria have been fixed to design specific skinning machines or adapt cattle skinning machines to ostrich slaughtering. Experimental results partially confirm theoretical analysis; they point out that the angle of inclination of drawing-force with back-line is a parameter which mostly influences the value of drawing-force and that this influence tends to increase as the angle is near to 90° or exceeds this limit. In any case, the applied drawing-force must not exceed 300,0 daN. Therefore ostrich skinning should be done with vertical-drawing machines and the animal should be suspended by its wings at the track walking beam, in relation to their anatomy structure and the tensile strength of the hide. In the case of low working capacity (8-10 heads per hour) the animal could be skinned suspended by the legs, considering some limitations pointed out during experimental trials
