In developing countries, dairy products play a very important role in food security and food safety. In Africa, many problems have hindered local milk production making dried milk imports from western countries necessary. Milk production should be improved to allow these countries to unburden themselves from their economic ties and to reduce health problems related to the use of dried milk. An analysis on the area of intervention, through a feasibility study, has allowed the collection of enough data to identify the appropriate framework of operation for the organization of a milk commodity system in the urban and periurban area of Maroua. The study has made possible the writing of a project presented to and financed by the Cariplo Foundation. Research and activities undertaken have permitted sustainable and long-lasting interventions. In particular the organization, rationalization and training of farmers and their wives, the creation of the milk analysis laboratory and the collection centre have allowed the implementation of the milk chain in the city. This has also guaranteed that milk sold in the market of Maroua is checked for quality so that milk hygienically unsafe is not distributed

Microbiological survey of milk and dairy products from a small scale dairy processing unit in Maroua (Cameroon)
In the African context, the production of milk and dairy products is affected by the application of
improper procedures during milking and processing, leading to microbial spoilage of milk, especially in
local small scale processing plants.
The aim of this survey was to identify potential hazards and evaluate the microbial contamination of
milk and dairy products in a small scale dairy processing unit located in Cameroon.
During a 6 week period, raw and pasteurized milk samples were evaluated for Total Aerobic Bacterial
Count e TBC, Total Coliforms, Escherichia coli and Coagulase Positive Staphylococci e CPS; dairy products
(yoghurt, soft cheese, mozzarella and ricotta) were also submitted to the count of Total Coliforms, E. coli
and CPS.
Contamination levels of raw milk samples varied widely; about half of the samples complied with
threshold values for TBC (5.0 Log CFU/ml) were
detected in some samples.
In pasteurized milk, high residual counts were observed, indicating an insufficient efficacy of thermal
treatment applied at the small scale unit; residual values >3 Log CFU/ml were detected for TBC, in some
cases associated with high counts for the other parameters.
Among dairy products, mozzarella and soft cheese resulted the most contaminated by coliforms (mean
value 2.7 Log CFU/g), while low contamination levels were detected for ricotta and yoghurt. Some
samples of mozzarella also harboured high counts (>3 Log CFU/g) of E. coli.
Based on microbiological outcomes and milk production flow characterisation, Preventive and Corrective
Measures were defined for milking and processing phases (thermal treatment, packaging and
storage), focussing on training of farmers and dairy employees to improve the hygiene of the local milk
and dairy production chain
El bienestar animal : principio fundamental de la cria agroecologica
As part of an international cooperation project has developed a line of work that aims to
strengthen, promote and support small organic livestock production in Uruguay. Animal welfare
is highlighted to be one of the basic principles of agro-ecological animal management. This
article has been developed to promote the dissemination and exchange of the latest knowledge
related to the animal welfare. In this paper, we analyze the origin, meaning, the importance and
methods of assessment of animal welfare, taking into account the critical points of agroecological
breeding and the importance of organic certification process
Periurban livestock for milk production in Africa, Niamey (Niger): a town study
In the last years the process of urbanization and the population growth caused a change in food needs of big cities in the Sahel area. The increasing demand of milk and derivates is fulfilled by the import of big quantities of dried milk from the surplus countries. Local milk production should be improved to permit these countries to unburden themselves of their economical ties and to reduce the health problems related to the use of dried milk. The aim of this study was to obtain the livestock, social and economic information of two periurban camps just involved in a previous dairy project in Niamey (Niger). The study used a questionnaire concerning the farmer’s personal data, the herd live data, herd distribution, livestock management and veterinary practices, the animals health and the valorization of milk production. The questionnaire, translated from French into Fulfundè (Peuhl native language), was structured in questions without multiple choices and it has been carried out from 15 April to 30 May 2003. The questions were asked individually, so that one farmer could not influence the others. The census involved 81 farmers, 1,433 cattle (48.7% in the periurban area, 51.3% in the pastoral area). The zebu cattle breeds (Bos Indicus) were: Azaouak (28%), Djeli (49%), Goudali (1%), and Bororo (22%). The milking cows were 41% in the periurban area. The average milk production was 0.5-1 liter in dry season and 1-2 liter in raining season. The seasonal incidence of diseases is particularly high during the dry season; digestive disorders, due to ingestion of inedible material (mainly plastic bags), sickness afflicting the respiratory and the urinary systems, some cases of heat-strokes, nervous and locomotion disorders, and some cases of canker (injuries located mainly in the tongue) are those largely mentioned from the farmers. This study has identified many constrains to the development of milk production; solving these problems will permit to improve milk production in urban and periurban Niamey area
